Cheesy Baked Zucchini Tots – Easy Baked Veggie Snack Recipe
These cheesy Zucchini Tots make the perfect healthy side dish or appetizer everyone will love!

Ingredients
1 cup zucchini, grated
1 large egg
¼ cup sharp cheddar cheese, finely shredded
⅓ cup italian breadcrumbs
1 tbsp grated parmesan
1 tsp minced onion
salt and black pepper to taste
How To Make It


STEP ONE – Preheat the oven to 400°F. Spray a baking sheet with cooking spray.
STEP TWO- Grate the zucchini, then ring out the excess water using a clean towel or layers of paper towel.
STEP THREE – Combine all of the ingredients into a medium bowl, until well mixed.
STEP FOUR – Use a tablespoon to scoop the mixture, then place on the baking sheet. Gently smash the zucchini scoops with the bottom of a glass or small bowl.
STEP FIVE – Transfer the baking sheet to the oven, and bake for 18 minutes, flipping the tots over halfway through baking. You’ll know they’re done when they’re golden brown.
