Cucumber Cream Cheese Pinwheels

Tortilla pinwheels are easy and versatile appetizers to make and we love them for game day appetizers, boating snacks or a light lunch.

They need 30 to 60 minutes of chill time and then these easy finger food snacks will be ready to enjoy.

Ingredients

  • Cream Cheese – softened to room temperature
  • Ranch Seasoning
  • Fresh Dill
  • Cucumbers

Sandra’s Tips

30 to 60 minutes of chill time will be needed to firm up the cream cheese after mixing and rolling the tortillas.

How To Make Cucumber And Dill Pinwheels

STEP ONE – Chop the dill and thinly slice the cucumbers.

STEP TWO – Mix the cream cheese and ranch seasoning in a small bowl. 

Cream cheese mixture is spread on flour tortilla.
Fresh dill is sprinkled on top of cream cheese mixture on top of flour tortilla.

STEP THREE – Spread ¼ of the cream cheese mixture onto each tortilla.

STEP FOUR – Scatter ½ Tablespoon of chopped dill over the cream cheese mixture.

Thinly sliced cucumbers are placed in a single layer on top of the cream cheese mixture on the flour tortilla.
Flour tortilla is rolled up on counter.

STEP FIVE- Arrange cucumbers on the tortilla in a single layer.

STEP SIX – Start from one end, and roll the tortilla tightly into itself until you meet the other end.

STEP SEVEN – Wrap the tortilla logs in plastic wrap, and refrigerate for 1 hour, or until ready to serve.

STEP EIGHT – Once ready to serve, remove the plastic wrap. Use a serrated knife to cut 2 inches off each end, then cut the remaining log into 6 equal portions.

STEP NINE – Lay flat on a platter to serve.

Storage Instructions

Tortilla sandwich rolls are best enoyed on the same day. Although you can eat them the following day, the flour tortilla will soak up some of the moisture. Store them in fridge for up to 6 hours and and enjoy them later!

Ingredients

8 oz cream cheese, softened

1 oz dry ranch seasoning packet

4 large flour tortillas

2 tsp fresh chopped dill

1 medium cucumber, sliced thin


Instructions

  1. Chop the dill and thinly slice the cucumbers.
  2. Mix the cream cheese and ranch seasoning in a small bowl. 
  3. Spread ¼ of the cream cheese mixture onto each tortilla.
  4. Scatter ½ tbsp of chopped dill over the cream cheese mixture.
  5. Arrange cucumbers on the tortilla in a single layer.
  6. Start from one end, and roll the tortilla tightly into itself until you meet the other end.
