Roasted Tomato Burrata Crostini

The combination of warm, caramelized tomatoes and cool, creamy burrata on crisp toasted bread is irresistible. It’s an easy make-ahead option too—just roast the tomatoes in advance and assemble right before serving for a fresh, crowd-pleasing appetizer.

Ingredients

  • Cherry tomatoes
  • Burrata cheese ball
  • Shallot, finely chopped
  • Garlic, minced
  • Olive oil
  • Salt and pepper to taste
  • Fresh basil leaves, chopped
  • 1 baguette, sliced (optional for serving)
  • Balsamic glaze (for serving)

Step by Step Instructions

STEP ONE – Preheat your oven to 375°F (190°C).

STEP TWO – In a baking dish, combine cherry tomatoes, chopped shallot, minced garlic and olive oil. Toss to coat the tomatoes evenly.

STEP THREE – Roast the tomatoes in the preheated oven for about 20-25 minutes or until they start to burst, releasing their juices. Then top roast on high for about 2-3 minutes to brown the top.

STEP FOUR – Once the tomatoes are done, remove them from the oven and let it cool for about 5 minutes.

STEP FIVE – Then sprinkle chopped fresh basil over them, season with salt and pepper, place the burrata on top of the tomatoes.

STEP SIX – Finish by drizzling balsamic glaze over the bruschettas.

Serve with crostinis, crackers  or bread.

Storage Instructions

Store the components separately for the best texture. Keep the roasted tomatoes in an airtight container in the fridge for up to 3 days. The toasted bread is best made fresh, but if needed, you can store it in an airtight container at room temperature for a day or two. When ready to serve, re-toast the bread if needed, then assemble just before serving to keep everything fresh and crisp!

4 oz burrata cheese ball

1 small shallot, finely chopped

2 cloves garlic, minced

2 Tablespoons olive oil

Salt and pepper to taste
