Zucchini Tots

Description

These crispy Zucchini Tots are the ultimate way to sneak in some veggies without sacrificing flavor. Made with grated zucchini, sharp cheddar, and a blend of breadcrumbs and parmesan, they’re baked until golden and perfect for dipping. Kid friendly, freezer friendly, and totally snackable, this easy recipe is a must try!


Ingredients

1 cup zucchini, grated

1 large egg

1/4 cup sharp cheddar cheese, finely shredded

1/3 cup italian breadcrumbs

1 tbsp grated parmesan

1 tsp minced onion

Salt and black pepper to taste


Instructions

  1. Preheat the oven to 400°F.  Spray a baking sheet with cooking spray.
  2. Grate the zucchini, then ring out the excess water using a clean towel or layers of paper towel.
  3. Combine all of the ingredients into a medium bowl, until well mixed.
  4. Use a tablespoon to scoop the mixture, then place on the baking sheet. Gently smash the zucchini scoops with the bottom of a glass or small bowl. 
  5. Transfer the baking sheet to the oven, and bake for 18 minutes, flipping the tots over halfway through baking. You’ll know they’re done when they’re golden brown.
