Ingredients
- Chicken – shredded cooked chicken which becomes coated with the rich feta cheese
- Pasta – we used a penne pasta which works well in this recipe binding with the melted feta cheese but you can use your favorite pasta shape
- Feta Cheese – softens as it bakes and provides this dish with a luscious creamy cheese sauce coating and an amazing rich and tangy flavor
- Cherry Tomatoes – are known for their sweetness and when they are baked the flavors are intensified for a delicious burst of juicy flavor that contrasts so well with the savory ingredients
- Spinach – adds a mild slightly earthy flavor that helps to balance the richness of the feta cheese and also adds a color contrast
- Basil – has a light and fresh flavor with a subtle sweetness that helps to balance the overall flavor of the dish
- Red Pepper Flakes – brings a mild spiciness to the dish which compliments the richness of the feta cheese very well
- Garlic Cloves – fresh chopped garlic is added as it adds its robust savory flavor that infuses its flavor into the entire dish adding to the wonderful complex depth of flavor we love
- Parmesan Cheese – grated on top adds its wonderful nutty aged cheese taste that pairs so well with the other ingredients in this recipe
- Black Pepper – adds seasoning and helps to balance the flavors
- Salt – I used Himalayan Salt as it is a fundamental ingredient that helps to balance and intensify the flavours
- Olive Oil – is combined with the garlic and tomatoes which helps to contribute to the creaminess of the feta cheese and to help the chicken stay moist as well as adding a rich fruity flavor
Substitutions
This recipe is so good and well tested I recommend using my ingredients as they contribute so much to the flavors!!
Rotisserie chicken can be used in place of the cooked chicken to help make things easier. Some might prefer its seasoning.
You can use dried herbs like Italian seasoning or make your own mix of basil and oregano instead of the fresh basil in a pinch.
How to make baked feta chicken pasta
- Preheat oven to 400°F.
- Add the cherry tomatoes in an even layer, chopped garlic cloves, 1/2 cup of olive oil and salt & pepper to a 9×13-inch casserole dish. Stir gently to combine and coat the tomatoes with oil.
- Place the block of feta cheese in the center of the baking dish, turning it over to coat with olive oil. Sprinkle the feta with black pepper.
- Bake in oven for 35 to 40 minutes. You will know that it is ready when the cherry tomatoes burst and the feta will have softened.
- When there is 15 minutes remaining on the cook time, cook pasta in boiling water according to package directions, reserving one cup of the pasta water. For best results, use al dente pasta. Set the pasta aside.
- Remove the dish from the oven and immediately add the fresh basil leaves, baby spinach and chopped or shredded chicken.
- Add the cooked pasta to the tomato mixture and give it a good stir with a wooden spoon.
- Use a fork to gently mash some of the block of feta cheese and some of the tomatoes. Give it a good stir, squishing some of the tomatoes and leaving others whole. Serve with freshly grated Parmesan cheese (optional) and chopped fresh basil.
Variations
You can also mix up the vegetables with bell peppers, broccoli, zucchini and sun-dried tomatoes. Use your favorite spices and seasonings to suit your tastes.

15 ounces (453g) pasta
2 pints cherry tomatoes (approx. 1 and 1/2 pounds)
8 ounces (225g) feta cheese block
1/2 cup olive oil
1/4 cup fresh basil, chopped
2 to 4 cloves garlic, chopped
1/4 teaspoon salt
1/4 teaspoon black pepper
2 cups cooked chicken, chopped or shredded
2 cups baby spinach
Freshly grated Parmesan cheese (optional for serving)
