Easy Marry Me Chicken Recipe

One of the things I love most about a home cooked meal of this sun-dried tomato chicken is that it is made in one pan and ready in 30 minutes!!

There are so many ways to serve this restaurant quality, versatile chicken breast recipe such as over pasta, rice, creamy mashed potatoes or green beans!!

Marry Me Chicken Ingredients

  • Chicken Breasts – boneless skinless chicken breasts
  • Avocado Oil
  • Onion – yellow onion, finely chopped
  • Sun dried Tomatoes – jarred julienned
  • Garlic Cloves – minced
  • All-Purpose Flour
  • Butter – unsalted butter
  • Chicken Stock – low-sodium chicken stock
  • Heavy Cream
  • Parmesan Cheese – grated or shredded
  • Spices and seasonings – Thyme (fresh), Oregano (dried), Red Pepper Flakes, Concentrated Chicken Stock, Salt, Black Pepper also can use basil or Italian seasoning

Substitutions & Variations: If you do not use low-sodium ingredients I recommend to eliminate the salt! You can also use chicken thighs in this recipe. Use the concentrated chicken stock of your choice we like to use the Better Than Bouillon brand chicken cubes. Add in olives and Bella mushrooms cooked with garlic in the skillet for 5 minutes if you prefer.

How To Make Marry Me Chicken

STEP ONE – In a large skillet add the avocado oil over medium heat. 
Once hot (2-3 minutes) add the raw chicken breasts, onion, pepper, and salt*. 
Over low to medium heat cook the chicken for 5-9 minutes. 
Flip the chicken over and cook for an additional 5-9 minutes or until the juices run clear.

STEP TWO – Remove the chicken from the skillet and set aside.

STEP THREE – Turn the burner to low. To the skillet add the garlic cloves. Stir for 3 minutes.

STEP FOUR – Add the flour and butter to the skillet. Stir for 3 minutes.

STEP FIVE – Add the chicken stock and heavy cream. Stir for 2-3 minutes or until a little thicker.

STEP SIX – Add the sundried tomatoes, parmesan cheese, 1 teaspoon of thyme leaves, Better Than Bouillon, oregano, and red pepper flakes. Stir until completely combined for 2-3 minutes or until the sauce is thicker.

STEP SEVEN – Add the chicken back into the skillet. Use a spoon to coat the chicken with the sauce.

STEP EIGHT – Top the chicken with the fresh thyme sprigs. Enjoy!

  • When using the low-sodium ingredients before adding in the chicken taste your sauce to see if you need to add in more salt for your taste preferences
  • Use a heavy cream not a light cream for the best thick and delicious cream sauce
  • We recommend using freshly grated parmesan cheese which offers more depth of flavor for the cream sauce in this chicken recipe

Storage and Freezing Instructions

Store any leftover chicken using an airtight container in the fridge for up to 5 days.

We do not recommend freezing marry me chicken leftovers, as any cream sauce does not freeze well.

Reheat in the microwave or over a medium low heat on the stove. You can add in some water to thin the sauce if you need to.

Ingredients

2 tablespoons avocado oil

4 chicken breasts (2 pounds)

1/4 cup yellow onion, finely chopped

1/2 teaspoon black pepper

1/8 teaspoon salt

3 garlic cloves, minced

4 tablespoons all-purpose flour

3 tablespoons unsalted butter

1 cup low-sodium chicken stock

1 cup heavy cream

1/2 cup jarred julienned sundried tomatoes

1/2 cup parmesan cheese, grated or shredded

35 springs thyme, divided (1 teaspoon pulled off the vine. The remainder left as sprigs.)

1 teaspoon of low-sodium Better Than Bouillon chicken

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes


Instructions

  1. In a large skillet add the avocado oil over medium heat.

  8. Top the chicken with the fresh thyme sprigs.
