Slow Cooker Marry Me Chicken

I love slow cooker chicken breast recipes as they are a great simple way to change things up when you are bored with lunch or dinner.

Once you sear the chicken to seal in extra flavor, this is a set-it-and-forget-it recipe is perfect for busy days or avoiding heating up the kitchen to make a home cooked meal.

Much like my one-pot marry me chicken recipe but with the convenience and ease of the slow cooker for an easy weeknight dinner or school night dinner recipe.

Ingredients

Marry me chicken ingredients on a countertop.
  • Chicken – 4 boneless skinless chicken breasts
  • Olive Oil
  • Butter
  • Garlic Powder
  • Salt and Pepper – to taste
  • Chicken Broth
  • Heavy Cream
  • Garlic Cloves – minced
  • Italian Seasoning
  • Paprika
  • Sun Dried Tomatoes – chopped
  • Parmesan – grated I like to use freshly grated parmesan cheese
  • Basil – fresh basil for the garnish

You can combine 1 tbsp. of cornstarch and 2 tbsp. of water whisked together to make a cornstarch slurry to thicken the sauce if desired.

Substitutions & Variations: You can use chicken thighs to make marry me chicken in the crockpot that many enjoy as more juicy and flavor packed. You can add in vegetables like mushroom and spinach to suit your tastes.

How To Make Marry Me Chicken Crock Pot

STEP ONE – Season the chicken breasts on both sides with salt, pepper, and garlic powder.

STEP TWO – Add the butter and olive oil to a skillet, and heat over medium-high heat.

STEP THREE – Lightly sear the chicken breasts.

STEP FOUR – To your crockpot, add the chicken, and the oil and butter left in the skillet.

STEP FIVE – In a mixing bowl, whisk together chicken broth, heavy cream, garlic, and remaining seasonings.

STEP SIX – Pour this mixture over the chicken.

STEP SEVEN – Add the sun dried tomatoes.

STEP EIGHT – Cook in the crock pot on low for 4-5 hours, until the chicken reaches an internal temperature of 165 degrees Fahrenheit.

STEP NINE – Remove the chicken from the crockpot and place on a plate.

STEP TEN – Whisk the sauce in the crockpot, and add the freshly grated parmesan cheese. Add the cornstarch slurry, if desired, to thicken the sauce.

STEP ELEVEN – If you use the cornstarch, cover the chicken you set aside, and turn the crockpot up to high to cook for 10 minutes more.

STEP TWELVE – Then, return the chicken to the crock pot and add fresh basil.

Serve, over pasta, noodles, rice, or creamy mashed potatoes.

Storage and reheating instructions

Store leftovers using an airtight container in the fridge for up to 3 days.

Reheat over a medium-low heat in a pan on the stove with a lid for 5 to 10 minutes stirring occasionally. Reheat using a microwave-safe dish in the microwave with 30 second intervals until heated through.

Ingredients

4 boneless skinless chicken breast

1 tbsp. extra virgin olive oil

2 tbsp. butter

1/2 tsp. garlic powder

Salt and pepper, to taste

1 cup chicken broth

1 cup heavy cream

2 tsp. minced garlic

1 tsp. Italian seasoning

1/2 tsp. paprika

Salt and pepper, to taste

3 tbsp. chopped sun dried tomatoes

1/2 cup fresh grated parmesan

Fresh basil for garnish

Optional, 1 tbsp. cornstarch and 2 tbsp water


Instructions

  1. Season the chicken breasts on both sides with salt, pepper, and garlic powder.
  2. Add the butter and olive oil to a skillet, and heat over medium-high heat.

  10. Whisk the sauce in the crockpot, and add the freshly grated parmesan cheese. Add the cornstarch slurry, if desired, to thicken the sauce.
  11. If you use the cornstarch, cover the chicken you set aside, and turn the crockpot up to high to cook for 10 minutes more.
  12. Then, return the chicken to the crock pot and add fresh basil.
  13. Serve, over noodles, rice, or mashed potatoes.
