Ritz Cracker Chicken Breasts

- Chicken Breasts – boneless skinless chicken breasts
- Ritz Crackers – crushed into crumbs
- All Purpose Flour
- Eggs – 2 large eggs beaten
- Parmesan Cheese – grated
- Garlic Salt
- Butter – unsalted butter melted
Substitutions
You can use panko bread crumbs, crushed saltine crackers or another butter cracker in place of the Ritz crackers.
Use Romano cheese, asiago or nutritional yeast instead of parmesan cheese.
Step by step instructions on how to make ritz cracker chicken
STEP ONE – Preheat oven to 375°F. Prepare a baking sheet by lining it with parchment paper or lightly greasing it.
STEP TWO – In a shallow dish, combine crushed Ritz crackers, grated Parmesan cheese, garlic salt, and black pepper.
STEP THREE – Place flour in another shallow dish, In a third shallow dish, beat the eggs.
STEP FOUR – Coat each chicken breast first in flour, tapping off excess. Dip in beaten eggs, then press into cracker mixture unJl well coated on all sides.
STEP FIVE – Place coated chicken breasts on the prepared baking sheet. Drizzle or brush evenly with melted buHer.
STEP SIX – Cook in the preheated oven for 25-30 minutes, or unJl chicken is golden brown, crispy, and reaches an internal temperature of 165°F.
STEP SEVEN – Let chicken rest for a few minutes before serving to allow juices to redistribute.
Variations
Make ritz cracker chicken strips for the kids for lunch by cutting the breasts into strips before coating. Enjoy them with dipped in your favorite sauce like a honey mustard dipping sauce.
Spice it up by adding your favorite herbs or spices like oregano, smoked paprika and cayenne pepper.

- To help make sure the coating sticks to the chicken thoroughly coat the chicken in flour first, which helps the eggs wash to stick and then press the cracker mixture onto the chicken firmly to ensure it adheres well
- We love this leftover the next day on a bun or a tortilla wrap with mayo
- Allow the chicken to rest for a few minutes before serving to allow the juices to redistribute
Can I use chicken thighs instead of chicken breasts?
Yes you can, adjusting the cooking time as the thighs may cooker slower of quicker depending on their size.
Can I cook this chicken in the air fryer?
Yes you can! Preheat the air fryer to 375°F and cook for 15 – 20 minutes flipping halfway or until the internal temperature of the chicken reaches 165°F for safe eating.
Can I cook this recipe ahead of time?
Yes, prepare the chicken through the breading step and place in the fridge for a few hours covered before baking.
Storage and reheating instructions
Store any leftover chicken in an airtight container in the fridge for 3 – 4 days.
Reheat in a 350°F oven for about 15 – 20 minutes or until heated through. For crispiness avoid using the microwave.
To freeze allow the chicken to cool and then freeze on a baking sheet. Once forced solid transfer to a freezer bag or freezer-safe container. Freeze for up to 3 months.
Thaw overnight in the fridge reheat as above. Reheat from frozen in a 375°F oven for 20-25 minutes or until heated through.
