Oven roasted red potatoes recipe

This easy roasted red potatoes recipe is perfect for a Thanksgiving or Christmas side dish, but also a great way to enjoy potatoes anytime for dinner.

I love using red potatoes for roasting as they have that yummy creamy texture that really blends so well with herbs or spices and parmesan cheese.

If you are like me, you also enjoy herbed roasted red potatoes as leftover fry up for breakfast the next day. The are so Good with bacon and eggs!!

Ingredients

  • Red Potatoes
  • Olive Oil
  • Basil
  • Parmigiano Cheese – freshly grated or parmesan cheese
  • Garlic Powder
  • Onion Powder
  • Thyme
  • Black Pepper
  • Salt
  • Chives – dried chopped chives is an optional garnish

Substitutions & Variations: If you do not have red potatoes on hand you can substitute using Russet, Yukon Gold, or white potatoes for roasting. Make it spicy by adding in 1/4 to 1/2 teaspoon of cayenne pepper. Add in rosemary or carrots, asparagus, green beans or broccoli. Make smashed roasted red potatoes by using the heel of a spoon to smash or crush down the potatoes

How to bake roasted red potatoes

STEP ONE- Preheat the oven to 400 degrees F.

STEP TWO – Line a cookie sheet with parchment paper or a silicone mat.

STEP THREE – In a large mixing bowl, mix the cut potatoes, and olive oil. Mix to coat the potatoes.

STEP FOUR – Add the garlic powder, salt, onion powder, dry basil, ground black pepper, and dry thyme leaves. Mix until the potatoes are coated with the seasonings.

STEP FIVE – Add the fresh grated Parmigiano to the potatoes. Mix so the potatoes are coated with the cheese.

STEP SIX – Pour the potato mixture into the prepared pan.

STEP SEVEN – Bake in the preheated oven for 50-60 minutes. Stirring every 15 minutes.

STEP EIGHT – Once cooked, allow the potatoes to cool for 1-2 minutes.

Sandra’s Top Tips

  • Using freshly grated Parmigiano cheese makes a big difference in the flavor
  • Make sure the potatoes are in a single layer on the baking sheet
  • The size of your potato bites will impact your cooking time with bigger pieces taking longer
  • Your potatoes are done when you can insert a fork easily into them
  • Before serving you can top with fresh herbs, dry chives or more grated Parmigiano
  • Serve with sour cream and chives, garlic aioli, ranch dressing, creamy dill sauce, gravy, or ketchup on the side.

Why are my roasted potatoes not crispy?

If your oven is not hot enough, or your baking pan is too overcrowded the potatoes will not get as crispy.

How to reheat roasted red skin potatoes

To reheat your leftover pan roasted red potatoes, allow them to sit at room temperature for 20 minutes. Cover in foil and bake at 400°F for 10 to 15 minutes or until heated through.

Reheat them in the air fryer for crispy red potatoes by placing them in the basket in a single layer. Preheat to 400°F and cook for 2 to 3 minutes, shake and cook for another 1 to 2 minutes until heated.

You can also pan fry them on the stove over medium heat for 3 to 5 minutes flipping them on each side. Best way to enjoy them for breakfast the next day.

Reheat an individual size in the microwave with a microwave-safe dish with 30 second intervals until warmed up.

Storage instructions

Store using an airtight container in the fridge for 3 to 4 days.

Freeze using a freezer-safe container for 2 to 3 months.

Thaw at room temperature before reheating.

Ingredients

2 1/2 pounds red potatoes, cleaned, not peeled, and cut in quarters

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon salt

1 teaspoon onion powder

1 teaspoon dry basil

1/2 teaspoon ground black pepper

1/4 teaspoon dry thyme leaves

2 tablespoons fresh grated Parmigiano

2 tablespoons dry chives *OPTIONAL FOR SERVING
