Description
This Ritz Cracker Chicken recipe combines juicy tender chicken breasts with a delicious crunchy buttery Ritz cracker coating. This quick and easy savory chicken dinner is made with a few simple ingredients and takes just 15 minutes of prep time.
Ingredients
4 boneless, skinless chicken breasts
1 sleeve of Ritz crackers, crushed into crumbs
1/2 cup grated Parmesan cheese
1 teaspoon garlic salt
1/2 teaspoon black pepper
1/2 cup all-purpose flour
2 large eggs, beaten
4 Tablespoons unsalted butter, melted
Instructions
Preheat oven to 375°F. Prepare a baking sheet by lining it with parchment paper or lightly greasing it.
In a shallow dish, combine crushed Ritz crackers, grated Parmesan cheese, garlic salt, and black pepper.
Place flour in another shallow dish, In a third shallow dish, beat the eggs.
Coat each chicken breast first in flour, tapping off excess. Dip in beaten eggs, then press into cracker mixture unJl well coated on all sides.
Place coated chicken breasts on the prepared baking sheet. Drizzle or brush evenly with melted buHer.
Cook in the preheated oven for 25-30 minutes, or unJl chicken is golden brown, crispy, and reaches an internal temperature of 165°F.
Let chicken rest for a few minutes before serving to allow juices to redistribute.
Notes
Storage and reheating instructions:
Store any leftover chicken in an airtight container in the fridge for 3 – 4 days.
Reheat in a 350°F oven for about 15 – 20 minutes or until heated through. For crispiness avoid using the microwave.
To freeze allow the chicken to cool and then freeze on a baking sheet. Once forced solid transfer to a freezer bag or freezer-safe container. Freeze for up to 3 months.
Thaw overnight in the fridge reheat as above. Reheat from frozen in a 375°F oven for 20-25 minutes or until heated through.
