Ingredients You’ll Need


1 lb ground beef
1 fresh jalapeño
6 slices pepper jack cheese
1 Tablespoon Worcestershire sauce
6 slices bacon – cooked and crumbled
1 teaspoon paprika
1 teaspoon garlic powder
¼ teaspoon salt
¼ teaspoon black pepper
12 count Brioche mini buns
¾ cup BBQ sauce
1 medium yellow onion
1 Tablespoon olive oil
¼ cup crispy fried onions
Cowboy Butter Ingredients:
3 tbsp unsalted melted butter
½ teaspoon minced garlic
⅓ teaspoon fresh parsley
¼ teaspoon red pepper flakes
½ teaspoon onion powder
Juice from ½ lemon
Step by Step Instructions


STEP ONE – Heat a large skillet over medium heat with oil. Chop the onion, and add it to the skillet. Cook until softened. Add ground beef, paprika, garlic powder, salt, and pepper. Cook until browned, about 7 to 10 minutes. Drain excess grease.
STEP TWO – Stir in ½ cup BBQ sauce and Worcestershire sauce. Let simmer for 2 minutes, then remove from heat.


STEP THREE – Preheat the oven to 350°F. Lightly spray a baking dish with nonstick spray. Slice brioche buns in half.


STEP FOUR – Place bottom halves of buns in the baking dish. Spoon beef mixture onto each bun, then top with a slice of pepper jack cheese, crumbled bacon, a drizzle of remaining BBQ sauce, crispy fried onions, and sliced jalapeño. Add the top bun.


STEP FIVE – In a small bowl, stir together the melted butter, minced garlic, chopped parsley, red pepper flakes, onion powder, and lemon juice. Brush the tops of the buns with the cowboy butter.

STEP SIX – Bake for 12 to 15 minutes, or until the cheese is melted and buns are golden brown.
