Crack Corn Dip (Easy Cold Dip Recipe)

It’s a sweet and savory dip recipe that blends the natural sweetness of sweet corn with savory elements like cheddar cheese, bacon and seasonings.

It’s easy to customize as you can make it mild or spicy, add more cheese or vegetables, or add ingredients it to suit your preferences.

It pairs perfectly with tortilla chips, chips, crackers, or fresh vegetables, making it simple to serve with crowd pleasing appeal in a creamy package that keeps you coming back for more.

Ingredients

  • Sweet Corn – can of sweet corn
  • Bacon – cooked and chopped
  • Mayonnaise
  • Sour Cream
  • Mexican Cheese – spicy shredded cheese blend or use Monetery Jack cheese
  • Scallions – chopped green onions
  • Jalapeno Peppers
  • Black Pepper
  • Garlic Powder
  • Onion Powder

For different variations you can add a ranch seasoning packet or some Buffalo sauce for an extra tangy, spicy kick.

How To Make Cowboy Corn Dip

STEP ONE – Drain the corn. Make sure all liquid is drained.

STEP TWO – Start by cooking your bacon in a pan, until it has reached your desired crispiness.

STEP THREE- Chop the scallions, jalapeno, and cooked bacon. Set aside.

STEP FOUR – In a medium-large bowl, add the corn, sour cream, mayonnaise, shredded cheese, chopped bacon, chopped scallions, chopped jalapeno and seasoning. Mix until well combined.

STEP FIVE – Keep refrigerated until ready for serving.

Serve with tortilla chips & enjoy!

2 (15 oz) cans of sweet corn kernels

4 slices of bacon

1 cup mayonnaise

1 cup sour cream

1 cup Mexican shredded cheese

3 scallions

1 jalapeno

1/2 teaspoon black pepper, or to taste

1/4 teaspoon garlic powder

1/4 teaspoon onion powder
