Easy Rotel Dip With Ground Beef

This easy Rotel Dip with Ground Beef is rich, creamy, and packed with bold flavor! Ingredients

½ cup onion, diced

1 pound ground beef (I used ground chuck 80/20)

1 teaspoon onion powder

½ teaspoon salt

½ teaspoon ground black pepper

⅛ teaspoon Chili powder

1 can (10 ounces) Rotel diced tomatoes with green chilies, drained

½ cup sour cream

1 block (8 ounces) cream cheese, room temperature

2 cups shredded Cheddar cheese

Step by Step Instructions

STEP ONE- In a large bowl, crumble the ground beef. Add the onion powder, salt, pepper, and Chili powder. Mix well and set aside. 

STEP TWO – Warm a large skillet (10 inches) on medium heat. Add the onions and soften them for 6-8 minutes. You may need to add some olive oil.

STEP THREE – Add the seasoned ground beef and cook on medium heat. Cook the ground beef is no longer pink.

STEP FOUR – Add the diced tomatoes and mix well. 

Sour cream, cream cheese and cheddar cheese are added to the ground beef mixture.

STEP FIVE – Turn the heat off and add the sour cream (temper it first), cream cheese, and shredded Cheddar cheese. SEE NOTE BELOW.

How to Temper Sour Cream

  • Before adding the sour cream and cream cheese to the meat mixture, ensure the cream cheese and sour cream are brought to room temperature.
  • Take out a small amount of the hot meat mixture and stir in the sour cream, then add it back to the skillet. This stops the sour cream from curdling.
  • Always keep sour cream in the refrigerator, however, taking it out when you start the recipe will stop it from curdling when you add it to the hot mixture.

STEP SIX – Turn the heat to low and mix until all the cheeses are melted and incorporated. Don’t overcook it. 

STEP SEVEN – Serve and Enjoy!

Storage Instructions

Store in an airtight container in the refrigerator for up to 3 days.
