Creamy Homemade Ranch Dip

I love recipes that combine cream cheese with ranch seasoning, marrying its creamy richness with the zesty kick of ranch.

Then add in more depth of flavor with the fresh bright notes of green onions, the subtle zesty heat of the jalapeños and the sweet crunch of the corn.

It always leaves me craving more of this amazing smooth dip and coming back for seconds!!

Ingredients

  • Cream Cheese – 16 oz cream cheese softened (2 x 8 oz packages)
  • Ranch Seasoning – 1 oz packet of dry ranch seasoning mix
  • Red Bell Pepper – finely diced
  • Jalapeños Pepper – finely diced is optional but it adds another layer of flavor
  • Can Corn – 15 oz can of corn drained
  • Black Olives – 4.25 oz can of black olives drained and chopped
  • Green Onions – 2 fresh green onions diced for the dip topping

Variations: You can also make this dip by adding in your preferred herbs or spices as well as sour cream and mayonnaise.

How to Make Poolside Dip

STEP ONE – Cut the red pepper and the jalapeno pepper, removing the stems and seeds. (If you want a spicier dip, keep the jalapeno seeds.)

STEP TWO – Dice the green onions, set aside.

STEP THREE – Mix the cream cheese and ranch seasoning in a large bowl using a hand mixer, until light and creamy.

STEP FOUR – Add the diced red pepper, diced jalapeno, corn, and olives to the bowl, and stir to combine.

STEP FIVE – Spoon mixture into serving bowl or dish, and top with diced green onions.

STEP SIX – You can serve it right away, or refrigerate until ready to serve.

STEP SEVEN – Serve with crackers, veggies, or chips.

Storage Instructions

Store covered in refrigerator for 3 to 4 days.

Ingredients

16 oz cream cheese, softened (28 oz packages)

1 oz packet dry ranch seasoning

1 red bell pepper, finely diced

1 jalapeno pepper, finely diced

115 oz can corn, drained

14.25 oz can chopped black olives, drained

2 green onions, diced – for topping


Instructions
