Baked chicken skewers recipe
These delicious chicken skewers are loaded with colorful bell peppers, onions with chicken seasoned using spices, lemon juice and fresh garlic. With no need to wait to marinate them!!
Great recipe to make ahead the day before and bake without sitting over a hot stove or grill just before dinner or when your guests arrive.
You can also enjoy these as grilled chicken kabobs if you are having a barbecue for an easy chicken dinner relaxing outside with the family or friends.
We like to make extra for meal planning during for the week. Enjoy them served with Hawaiian macaroni salad, Mexican street corn pasta salad, strawberry and spinach salad, cold spaghetti pasta salad, garlic French fries and cilantro lime rice.
Ingredients
- Chicken – 1 pound of chicken, cubed boneless skinless chicken breasts are great to use
- Zucchini – cut into 1/4 inch slices
- Bell Peppers – 2 cups of red and yellow bell peppers cut into 1-inch pieces
- Red Onion – cut into 1-inch pieces
- Avocado Oil – or olive oil
- Garlic Cloves – minced
- Lemon Juice
- Sweet Paprika – or use regular paprika
- Italian Seasoning
- Salt and Black Pepper
- Onion Powder
- Garlic Powder
- Parsley – chopped
Substitutions and variations: Substitute any of the vegetables with your favourite ones or change things up with some fresh pineapple fruit. Switch up the meat by using pork tenderloin or beef or just using the chicken with no vegetables.
How to cook chicken kabobs in the oven
STEP ONE- Place the skewers in water for 20 minutes.
STEP TWO – Preheat the oven to 400° F.
STEP THREE – In a plastic bag add the chicken, zucchini, bell peppers, onion, avocado oil, minced garlic, lemon juice, sweet paprika, Italian seasoning, coarse kosher salt, black pepper, onion powder, and garlic powder. Seal the bag and shake until everything is coated.
STEP FOUR – Alternate the chicken and vegetables onto the skewers.
STEP FIVE – Place the skewers onto 2 9×13 baking sheets or 1 13×18 baking sheet.
STEP SIX – Bake for 12-15 minutes or until the juices run clear. You want an internal temperature of 165° F.
STEP SEVEN – Sprinkle parsley on top and enjoy.
How long to grill chicken kabobs?
Place the kabobs evenly on the grill or griddle for 10 to 14 minutes turning halfway through or until they have cooked through and no longer pink inside. The internal temperature of cooked chicken should reach 165°F.

- Metal skewers can help spread the heat evenly while cooking
- If you use wooden skewers be sure to soak them for at least 20 minutes to prevent them from burning
- Using a baking sheet allows the heat to circulate around the kababs in the oven so they cook evenly with a nice browning
- Allow them to rest for a couple of minutes after baking or grilling to let the yummy juices to recirculate for juicer chicken
- Easily double or triple this recipe for serving a crowd or for meal planning
- You can serve chicken kabobs with a yogurt based sauce like tzatziki or ranch sauce for dipping
- The internal temperature of cooked chicken should reach 165°F using a digital thermometer for safe eating.
Storage and reheating instructions
Store any leftovers on or off the skewers and wrapping them or using an airtight container in the fridge for up to 4 days.
Kebabs in the oven are great for meal planning as leftovers are proportioned and ready to eat on the go, my favorite on a salad, in chicken tacos or a wrap.
Reheat them on a microwave-safe dish in the microwave with 30 second intervals until heated though.. Remove them from the skewers and reheat in a 350° oven covered in foil until warmed though.

Made these the other night and this recipe is a keeper. I used chicken tenders, I did not cube, left whole and just put on sheet pan, did not put on skewers, threw in cherry tomatoes 1/2 way through cooking, greet flavors!!
