Classic Poolside Dip

Description

This Classic Poolside Dip recipe has a light, creamy texture, and is packed with refreshing flavors. It is the perfect cold appetizer or satisfying snack to enjoy on hot summer days spent lounging outside or by the pool. Serve with crackers, fresh vegetables, or chips.


Ingredients

16 oz cream cheese, softened (2 - 8 oz packages)

1 oz packet dry ranch seasoning

1 red bell pepper, finely diced

1 jalapeno pepper, finely diced

1 - 15 oz can corn, drained

1 - 4.25 oz can chopped black olives, drained

2 green onions, diced - for topping


Instructions

  1. Cut the red pepper and the jalapeno pepper, removing the stems and seeds. (If you want a spicier dip, keep the jalapeno seeds.)
  2. Dice the green onions, set aside.
  3. Mix the cream cheese and ranch seasoning in a large bowl using a hand mixer, until light and creamy.
  4. Add the diced red pepper, diced jalapeno, corn, and olives to the bowl, and stir to combine.
  5. Spoon mixture into serving bowl or dish, and top with diced green onions.
  6. You can serve it right away, or refrigerate until ready to serve.
  7. Serve with crackers, veggies, or chips.

Notes

Storage: Store covered in the refrigerator for 3 to 4 days.
