Roasted Red Potatoes

These crispy Roasted Red Potatoes are perfectly seasoned with herbs and spices to make the best oven roasted garlic parmesan potato side dish. They are crispy on the outside but fluffy and tender on the inside!!


2 1/2 pounds red potatoes, cleaned, not peeled, and cut in quarters

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon salt

1 teaspoon onion powder

1 teaspoon dry basil

1/2 teaspoon ground black pepper

1/4 teaspoon dry thyme leaves

2 tablespoons fresh grated Parmigiano

2 tablespoons dry chives *OPTIONAL FOR SERVING


  1. Preheat the oven to 400 degrees F.

  2. Line a cookie sheet with parchment paper or a silicone mat.

  3. In a large mixing bowl, mix the cut potatoes, and olive oil. Mix to coat the potatoes.

  4. Add the garlic powder, salt, onion powder, dry basil, ground black pepper, and dry thyme leaves. Mix until the potatoes are coated with the seasonings.

  5. Add the fresh grated Parmigiano to the potatoes. Mix so the potatoes are coated with the cheese.

  6. Pour the potato mixture into the prepared pan.

  7. Bake in the preheated oven for 50-60 minutes. Stirring every 15 minutes.

  8. Once cooked, allow the potatoes to cool for 1-2 minutes.

  9. Serve and Enjoy!


Storage instructions:

Store using an airtight container in the fridge for 3 to 4 days.

Freeze using a freezer-safe container for 2 to 3 months.

Thaw at room temperature before reheating.
