Description
These oven roasted red potatoes are crispy on the outside, fluffy on the inside, and full of simple garlic and herb flavor. With just 10 minutes of prep, they make the perfect easy side dish for busy weeknight dinners.
Ingredients
2 1/2 pounds red potatoes, cleaned, not peeled, and cut in quarters
3 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon onion powder
1 teaspoon dry basil
1/2 teaspoon ground black pepper
1/4 teaspoon dry thyme leaves
2 tablespoons fresh grated Parmigiano
2 tablespoons dry chives *OPTIONAL FOR SERVING
Instructions

Preheat the oven to 400 degrees F.

Line a cookie sheet with parchment paper or a silicone mat.

In a large mixing bowl, mix the cut potatoes, and olive oil. Mix to coat the potatoes.

Add the garlic powder, salt, onion powder, dry basil, ground black pepper, and dry thyme leaves. Mix until the potatoes are coated with the seasonings.

Add the fresh grated Parmigiano to the potatoes. Mix so the potatoes are coated with the cheese.

Pour the potato mixture into the prepared pan.

Bake in the preheated oven for 50-60 minutes. Stirring every 15 minutes.

Once cooked, allow the potatoes to cool for 1-2 minutes.
