Ingredients You’ll Need

- 5 tablespoons butter
- 5 cups mini marshmallows
- 5 cups Rice Krispies cereal
- Filling:
- 3 tablespoons butter
- 3 tablespoons pumpkin puree
- ¾ teaspoon pumpkin pie spice
- 3 cups mini marshmallows
- Orange gel food coloring, just 2-3 drops
- 3 cups Rice Krispies cereal
- Whipped topping, optional
Step By Step Instructions


STEP ONE – Melt 5 tablespoons of butter in a large pot over medium heat.
STEP TWO – Add 5 cups of mini marshmallows and stir continuously until the marshmallows are completely melted and smooth.
STEP THREE – Add 5 cups of Rice Krispies cereal and gently fold until the cereal is evenly coated with the marshmallow mixture.

STEP FOUR – Lightly grease the muffin tins with cooking spray. Place about ¼ cup of the Rice Krispie mixture into each muffin cup. Press the mixture into the bottom and up the sides to create a mini pie crust shape. Set aside while you prepare the filling.


STEP FIVE – Using the same pot, melt the remaining 3 tablespoons of butter over medium heat.
STEP SIX – Add the pumpkin puree and pumpkin pie spice and stir until well combined.
STEP SEVEN – Add the remaining 3 cups of mini marshmallows and stir continuously until completely melted.
STEP EIGHT – Stir in 2 drops of orange gel food coloring. Add another drop if needed to reach your desired shade of orange.
STEP NINE – Add the remaining 3 cups of Rice Krispies cereal and gently fold until evenly coated with the pumpkin marshmallow mixture.

STEP TEN – Spoon about 2 to 3 tablespoons of the pumpkin filling into the center of each prepared Rice Krispie crust. Gently press the filling into the center so it sticks to the crust.
Allow the treats to set for about 20 minutes before serving. Top each mini pumpkin pie with whipped topping, if desired.

Recipe Tips & Notes
- Pumpkin puree: The small amount of pumpkin puree adds pumpkin flavor, helps keep the center softer and balances some of the sweetness from the marshmallows. You can leave it out if preferred and add a little vanilla extract along with the pumpkin pie spice.
- Pumpkin marshmallows: If you can find pumpkin-flavored marshmallows, you can use them for even more pumpkin flavor. I would use them for the filling only so the outside crust keeps its lighter color.
- Change the spices: Ground cinnamon can be used instead of pumpkin pie spice, or try a combination of the two.
- Make them chocolate: Skip the pumpkin and turn these into mini chocolate Rice Krispie pies. Add cocoa powder to the filling or use Cocoa Krispies. A small amount of prepared chocolate pudding can also be mixed into the filling for a softer texture.
- No muffin tin? Press the cereal mixture into a pie plate to make one large Rice Krispie pie. You can also layer the crust and filling in a baking pan and cut it into squares once set.
- Prevent sticking: The mixture will be very sticky while you’re shaping it. Lightly coat your hands or food-safe gloves with cooking spray before pressing the mixture into the muffin tins.
- Grease your measuring cup: If you’re measuring the mixture into portions, lightly spray the inside of the measuring cup with cooking spray to make it easier to release.
- Don’t let them sit too long: The treats become firmer as they sit. About 20 minutes is enough time for them to set while still staying soft and chewy.
- Soften before serving: If they become firmer than you’d like, microwave an individual treat for about 5 to 10 seconds for a softer, gooier texture.
- Whipped topping: Add a little whipped topping just before serving to give each treat the look of a miniature pumpkin pie.
