- 1 – 1 ½ lbs boneless, skinless chicken breasts (cut into bite-sized chunks)

- 1 Red bell pepper, cut into 2-3 inch pieces
- 1 Yellow bell pepper, cut into 2-3 inch pieces
- ¼ cup Parmesan cheese
- 3 tbsp breadcrumbs
- 2 tbsp Olive oil
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 1 tsp Italian seasoning
- 1 tsp Black pepper
- 1/2 tsp Salt
- ¾ cup Shredded mozzarella cheese
- Fresh parsley, optional
Step By Step Intructions




STEP ONE – Preheat the oven to 375°F. Cut the potatoes into 1-inch pieces, chop the broccoli and bell peppers, and cut the chicken breasts into bite-sized pieces.
STEP TWO – In a small bowl, combine the Parmesan cheese, breadcrumbs, olive oil, garlic powder, onion powder, Italian seasoning, black pepper and salt. Stir until well mixed.


STEP THREE – Place the chicken, potatoes, broccoli and bell peppers in a large mixing bowl. Add the Parmesan and breadcrumb mixture and toss until everything is evenly coated.
STEP FOUR – Transfer the chicken and vegetables to a large sheet pan, spreading everything into an even layer.
STEP FIVE – Bake for 20 to 25 minutes, until the chicken is cooked through and the potatoes are tender.

STEP SIX – Sprinkle the shredded mozzarella cheese evenly over the chicken and vegetables. Return the sheet pan to the oven for another 5 minutes, or until the cheese is melted and bubbly.
STEP SEVEN – Garnish with freshly chopped parsley, if desired, and serve warm.

Storage
Store leftover Sheet Pan Mozzarella Chicken in an airtight container in the refrigerator for up to 3 to 4 days. Allow the chicken and vegetables to cool before transferring them to the container.
Reheating
Reheat leftovers in a 350°F oven until warmed through, or heat individual portions in the microwave. For the best texture, the oven or air fryer will help crisp the potatoes and vegetables again.

- Cut everything evenly: Keep the chicken and potatoes in similar-sized pieces so they cook evenly and finish at about the same time.
