- 4 lbs sweet potatoes, peeled and cut into 1 inch cubes
- ½ cup brown sugar, plus more for topping
- ¼ cup honey or maple syrup
- ¼ cup butter, melted
- 1 tablespoon water
- ½ tablespoon pure vanilla extract
- ½ tablespoon pumpkin pie spice
- 1 teaspoon ground cinnamon
- ½ teaspoon salt
- 2 cups mini marshmallows
- ¾ cup pecan halves
Step By Step Instructions


STEP ONE – Add the cubed sweet potatoes to the slow cooker.
STEP TWO – In a medium bowl, stir together the brown sugar, honey or maple syrup, melted butter, water, vanilla extract, pumpkin pie spice, cinnamon and salt until well combined.


STEP THREE – Pour the brown sugar mixture over the sweet potatoes and gently toss until the potatoes are evenly coated.
STEP FOUR – Cover and cook on HIGH for 3 to 4 hours, or until the sweet potatoes are very tender. Stir after about 2 hours to help them cook evenly and prevent the edges from burning.
STEP FIVE – Once tender, mash the sweet potatoes directly in the slow cooker until they reach your desired consistency. Smooth the mashed sweet potatoes into an even layer.

STEP SIX – Sprinkle the marshmallows and pecans evenly over the top.
STEP SEVEN – Cover and continue cooking for about 15 minutes, or until the marshmallows are soft and melted.
STEP EIGHT – For toasted marshmallows, carefully brown the tops with a small kitchen torch, if desired. Serve warm.

Notes
- Cut evenly: Cut the sweet potatoes into similar-sized 1-inch cubes so they cook at the same rate.
- Fresh sweet potatoes: Fresh sweet potatoes will give you the best texture, although canned or frozen sweet potatoes can also be used.
- Leave them chunky: Mashing is optional. You can leave the cooked sweet potatoes cubed and add the marshmallows and pecans on top.
- Mix in the toppings: For extra marshmallows and pecans throughout the casserole, stir some into the sweet potatoes before adding the remaining toppings.
- Change the nuts: Walnuts or almonds can be used instead of pecans. Candied nuts will work too, but will make the casserole sweeter.
- Toast the marshmallows: Toasting is optional, but it gives the marshmallows a golden top while keeping them soft and gooey underneath.
