Marry Me Chicken (Ready in 30 Minutes)

Description

This one pot Marry Me Chicken recipe has a perfect balance of delicious flavors with a rich and creamy Parmesan sauce. The blend of the flavors with fresh thyme, sun-dried tomatoes, parmesan cheese and red pepper flakes all help create one of the best chicken recipes ever!! As the saying goes this recipe is so good it will have anyone proposing by the end of the night.


Ingredients

2 tablespoons avocado oil

4 chicken breasts (2 pounds)

1/4 cup yellow onion, finely chopped

1/2 teaspoon black pepper

1/8 teaspoon salt

3 garlic cloves, minced

4 tablespoons all-purpose flour

3 tablespoons unsalted butter

1 cup low-sodium chicken stock

1 cup heavy cream

1/2 cup jarred julienned sundried tomatoes

1/2 cup parmesan cheese, grated or shredded

35 springs thyme, divided (1 teaspoon pulled off the vine. The remainder left as sprigs.)

1 teaspoon of low-sodium Better Than Bouillon chicken

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes


Instructions

  1. In a large skillet add the avocado oil over medium heat. 
    Once hot (2-3 minutes) add the raw chicken breasts, onion, pepper, and salt*.
    Over low to medium heat cook the chicken for 5-9 minutes.
    Flip the chicken over and cook for an additional 5-9 minutes or until the juices run clear.
  2. Remove the chicken from the skillet and set aside.
  3. Turn the burner to low. To the skillet add the garlic cloves. Stir for 3 minutes.
  4. Add the flour and butter to the skillet. Stir for 3 minutes.
  5. Add the chicken stock and heavy cream. Stir for 2-3 minutes or until a little thicker.
  6. Add the sundried tomatoes, parmesan cheese, 1 teaspoon of thyme leaves, Better Than Bouillon, oregano, and red pepper flakes. Stir until completely combined for 2-3 minutes or until the sauce is thicker.
  7. Add the chicken back into the skillet. Use a spoon to coat the chicken with the sauce.
  8. Top the chicken with the fresh thyme sprigs.

Notes

Storage and freezing instructions:

Store any leftover chicken using an airtight container in the fridge for up to 5 days.

We do not recommend freezing marry me chicken leftovers, as any cream sauce does not freeze well.

Reheat in the microwave or over a medium low heat on the stove. You can add in some water to thin the sauce if you need to.
