Cucumber And Dill Pinwheel Appetizers

Description

These Fresh Dill & Cheese Cucumber Pinwheels are an easy make-ahead appetizer or snack to bring to a party. The fresh dill flavor blends with the fresh cucumber and cream cheese for a flavorful tortilla rollup that will have you wanting seconds! 


Ingredients

8 oz cream cheese, softened

1 oz dry ranch seasoning packet

4 large flour tortillas

2 tsp fresh chopped dill

1 medium cucumber, sliced thin


Instructions

  1. Chop the dill and thinly slice the cucumbers.
  2. Mix the cream cheese and ranch seasoning in a small bowl. 
  3. Spread ¼ of the cream cheese mixture onto each tortilla.
  4. Scatter ½ tbsp of chopped dill over the cream cheese mixture.
  5. Arrange cucumbers on the tortilla in a single layer.
  6. Start from one end, and roll the tortilla tightly into itself until you meet the other end. 
  7. Wrap the tortilla logs in plastic wrap, and refrigerate for 1 hour, or until ready to serve.
  8. Once ready to serve, remove the plastic wrap. Use a serrated knife to cut 2 inches off each end, then cut the remaining log into 6 equal portions.
  9. Lay flat on a platter to serve. Enjoy!

Notes

Tortilla sandwich rolls are best enoyed on the same day. Although you can eat them the following day, the flour tortilla will soak up some of the moisture. Store them in fridge for up to 6 hours and and enjoy them later.
