Watermelon Feta and Mint Salad
I love serving and enjoying this wonderful simple watermelon and feta salad that is bursting with the additional flavors of the balsamic glaze dressing and mint leaves.
The creamy crumbly feta cheese with the crisp, juicy watermelon is one of the best salads to enjoy on hot days that’s refreshing as it is delicious.
I often serve it with my popular creamy red potato salad and the best devilled eggs as they always get rave reviews at any warm weather gatherings with family and friends.
Enjoy it with served my chicken kabobs, bang bang chicken skewers, cold Italian sliders, bbq chicken sliders or my favorite cheeseburger sliders.
Ingredients
- Watermelon – fresh watermelon cut into bite-sized cubes
- Feta Cheese – crumbled on top
- Balsamic Glaze – use your favorite balsamic glaze dressing from the grocery store or use my instructions below to make a homemade version
- Mint Leaves – chopped to taste that adds a fresh, cool, slightly sweet herb flavor enhancing the overall flavour of the salad
How to make your own balsamic glaze reduction: In a small saucepan, combine 2 cups of balsamic vinegar with ½ cup brown sugar. Bring to a gentle boil, then simmer over medium heat for 10 minutes. Mixture should be reduced by half and coat the back of a metal spoon. Store covered in the fridge for 2 to 3 days.
Variations: Easy to customize with fresh herbs like basil, arugula, cucumbers or red onions to make the best salad for you and your guests.
How To Make Feta Cheese Watermelon Salad with Balsamic
Prepare the Watermelon: Start by cutting the watermelon into bite-sized cubes. Place the cubed watermelon in a large bowl.
Add the Feta Cheese: Sprinkle the crumbled feta cheese over the watermelon cubes.
Drizzle the Balsamic Glaze: Evenly drizzle the balsamic glaze over the watermelon and feta.
Add Mint Leaves: Chop the fresh mint leaves and sprinkle them over the salad.
Toss and Serve: Gently toss the salad to combine all the ingredients. Serve immediately and enjoy this refreshing and flavorful summer salad!
You can easily double or triple this salad to serve at potlucks or for dinner.
Storage Instructions
I like to serve it immediately or make it ahead of time chilled for an hour or two in the fridge and giving it a light toss before serving, as it is best enjoyed fresh with crisp watermelon.
Store the salad separately from the balsamic dressing as soon as it is made draining any excess liquid using an airtight container for 1 day in the fridge. The longer it sits the more the watermelon will become soggy.
