Description
This easy Rotel Dip is rich, creamy, and packed with bold flavor! Made with ground chuck, sautéed onions, zesty spices, and Rotel tomatoes with green chilies, it’s a warm, cheesy dip that’s always a crowd-pleaser. Cream cheese and sour cream add irresistible creaminess, while sharp cheddar brings the perfect melt. Serve it hot with chips and watch it disappear fast!
Ingredients
1/2 cup onion, diced
1 pound ground beef (I used ground chuck 80/20)
1 teaspoon onion powder
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/8 teaspoon Chili powder
1 can (10 ounces) Rotel diced tomatoes with green chilies, drained
1/2 cup sour cream
1 block (8 ounces) cream cheese, room temperature
2 cups shredded Cheddar cheese
Instructions
- In a large bowl, crumble the ground beef. Add the onion powder, salt, pepper, and Chili powder. Mix well and set aside.
- Warm a large skillet (10 inches) on medium heat. Add the onions and soften them for 6-8 minutes. You may need to add some olive oil.
- Add the seasoned ground beef and cook on medium heat. Cook the ground beef is no longer pink.
- Add the diced tomatoes and mix well.
- Turn the heat off and add the sour cream (temper it first), cream cheese, and shredded Cheddar cheese. SEE NOTE
- Turn the heat to low and mix until all the cheeses are melted and incorporated. Don’t overcook it.
