- easy chicken recipe that is perfect for busy weeknights and always a huge hit on busy days in our family.
- great way to use up that leftover rotisserie chicken (or cook fresh chicken)
- freezes well for later in individual portions for meal prep
- delicious leftover and reheats well
Ingredients You’ll Need

- 1 (10.5 ounce) can cream of mushroom soup
- 1 (10.5 ounce) can cream of chicken soup
- 3/4 cup chicken stock
- 1/4 teaspoons garlic powder
- 1/2 teaspoon onion powder
- 4 cups cooked chicken, shredded
- 4 cups mixed frozen vegetables
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 and 3/4 cups cheddar cheese, divided
- 4 cups (16 ounces/1pkg) frozen tater tots
- Parsley for garnish (optional)
Step by Step Instructions

STEP ONE – Preheat oven to 400°F. Lightly grease a 9×13-inch casserole dish.
STEP TWO – In a large bowl, combine cream of mushroom soup, cream of chicken soup, garlic powder, onion powder and chicken broth.
STEP THREE – Season with salt & pepper to taste.
STEP FOUR – Stir in shredded or chopped chicken and frozen vegetables. There is no need to cook the veggies in advance. They will cook in the oven in the sauce.

STEP FIVE – Stir in 1 cup of shredded cheddar cheese, just until combined.
STEP SIX – Spread the chicken mixture into to the prepared casserole dish. Smooth it out evenly with a spatula, then top with an even layer offrozen tater tots.

STEP SEVEN – Bake in 400°F oven for 40 minutes. Sprinkle remaining cheese on top and bake for an additional 5 to 10 minutes or until heated through and tater tots are lightly browned and crispy.
STEP EIGHT – Sprinkle with chopped parsley or chopped green onions (optional).
Do I need to thaw the frozen vegetables?
No! Add them right to the soup mixture and bake as directed. The frozen vegetables will cook in the soup mixture.
Taste before seasoning with salt & pepper. You can buy low-sodium cream soup and then add salt. You may find that you don’t need to add salt with regular cream of chicken and cream of mushroom soup. I always recommend pepper though.

Storage and Reheating Instructions
Store leftovers in the refrigerator for 3 to 4 days. Cover casserole dish with plastic wrap, or transfer leftovers to an airtight container.
To reheat, place the leftover tater tot chicken casserole in a preheated 350°F oven in an oven-safe baking dish. Cover with foil and reheat for 15 to 20 minutes. Set the oven to broil for two to three minutes once heated through for crispy tater tots.
Can I freeze tater tot casserole?
Yes, you can freeze tater tot casserole. Assemble following the recipe directions but do no bake the casserole. Wrap in plastic wrap and a layer of aluminum foil. You can freeze the casserole for up to three months.

Love this easy to make chicken tater tot casserole. We love tater tots so it’s great to enjoy them in a casserole. So easy for dinner and to have leftovers the next night is so amazing and convenient. Thanks!
My husband and I enjoyed this, and actually omitted the chicken and used more vegetables. A quick but filling weeknight dinner that’s very similar to pot pie. Even with omitting the salt and using reduced sodium condensed soup it tasted a bit salty, so be mindful of that if you’re watching your sodium intake.
Never had tater tot casserole with chicken. This was great. Will make again
