This Viral TikTok recipe had me at ‘ten minute prep time’. I love this recipe for busy nights when i don’t know what to make and I’m too tired to even think 🙂
It’s a great dinner to add to your meal plan for the month and have the frozen dumplings in the freezer ready to go!

Ingredients You’ll Need

  • 14oz coconut milk
  • 2 tablespoons red curry paste
  • 3 tablespoons soy sauce
  • 2 tablespoons minced garlic
  • 1 teaspoon ground ginger
  • 1 tablespoon lime juice
  • 1 tablespoon toasted sesame oil
  • ¼ teaspoon salt
  • ¼ cup creamy peanut butter
  • 3 cups chopped bok choy (see notes)
  • 25-30 frozen mini chicken dumplings
  • Optional Toppings:
  • Green onion
  • Chili crisp oil

Step by Step Instructions

First set of ingredients in 9x13-inch baking dish.
Bok choy is added to the mixed ingredients.

STEP ONE – Preheat the oven to 375 degrees.

STEP TWO – In a medium casserole dish, combine the coconut milk, red curry paste, soy sauce, minced garlic, ground ginger, lime juice, toasted sesame oil, salt, and peanut butter. 

STEP THREE – Stir until there are no remaining lumps of peanut butter. 

STEP FOUR – Add the chopped bok choy and mix until the bok choy is evenly coated in the peanut butter mixture.

Dumplings are layered in baking dish.
Sauce is spooned over dumplings in baking dish.

STEP FIVE – Begin arranging the dumplings, seam side up, in the casserole dish. (I prefer to do three rows of dumplings: one down each of the long edges of the casserole dish and one in the center.)

STEP SIX – Once all the dumplings have been added, use a small spoon to coat the tops of each dumpling in the sauce.

STEP SEVEN – Cover the dish with aluminum foil and bake for 35 minutes. After removing from the oven, let the dumpling bake cool for about 5 minutes. Then, remove the aluminum foil and, if desired, top with green onions and chili crisp oil.

The dumpling bake can be served on its own or over rice.

14oz coconut milk

2 tablespoons red curry paste

3 tablespoons soy sauce

2 tablespoons minced garlic

1 teaspoon ground ginger

1 tablespoon lime juice

1 tablespoon toasted sesame oil

1/4 teaspoon salt

1/4 cup creamy peanut butter

3 cups chopped bok choy (see notes)

2530 frozen mini chicken dumplings

Optional Toppings:

Chili crisp oil
