This Viral Dumpling Bake is the ultimate easy weeknight dinner. Made with frozen chicken dumplings, coconut milk, red curry paste, and peanut butter, everything comes together in one casserole dish with just 10 minutes of prep. The oven does the rest, creating a creamy, flavor-packed dinner that’s perfect for busy nights when you need something quick, satisfying, and a little different from the usual casserole recipes.
Ingredients
14oz coconut milk
2 tablespoons red curry paste
3 tablespoons soy sauce
2 tablespoons minced garlic
1 teaspoon ground ginger
1 tablespoon lime juice
1 tablespoon toasted sesame oil
1/4 teaspoon salt
1/4 cup creamy peanut butter
3 cups chopped bok choy (see notes)
25-30 frozen mini chicken dumplings
Optional Toppings:
Green onion
Chili crisp oil
Instructions
- In a medium casserole dish, combine the coconut milk, red curry paste, soy sauce, minced garlic, ground ginger, lime juice, toasted sesame oil, salt, and peanut butter. Stir until there are no remaining lumps of peanut butter.
- Add the chopped bok choy and mix until the bok choy is evenly coated in the peanut butter mixture.
- Begin arranging the dumplings, seam side up, in the casserole dish. (I prefer to do three rows of dumplings: one down each of the long edges of the casserole dish and one in the center.)
- Once all the dumplings have been added, use a small spoon to coat the tops of each dumpling in the sauce.
- Cover the dish with aluminum foil and bake for 35 minutes. After removing from the oven, let the dumpling bake cool for about 5 minutes.
- Next, remove the aluminum foil and, if desired, top with green onions and chili crisp oil.
- The dumpling bake can be served on its own or over rice.
Notes
Storage Instructions: The dumpling bake can be stored in an airtight, refrigerated container for 4-5 days.
