Tater Tot Breakfast Casserole

Tater Tot Breakfast Casserole is a hearty, family-friendly dish loaded with eggs, ham, cheese, and crispy tater tots. It’s easy to make, filling, and guaranteed to become a breakfast favorite.

This make-ahead breakfast bake is perfect for holiday gatherings, brunch with friends, or lazy weekends at home. Just mix it up, bake until golden, and serve a crowd-pleasing meal with minimal effort.

Ingredients You’ll Need

1lb. tater tots

10 eggs

1 cup milk

1/2 cup sour cream

1 cup diced ham

2 cups shredded cheddar cheese, divided

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

Salt and pepper, to taste

1/4 cup sliced green onions, of serving (optional)

Step By Step Instructions

Eggs and milk in bowl.
Remaining ingredients are added to the mixing bowl.

STEP ONE – Preheat the oven to 350°F/180°c.

STEP TWO – Add the eggs, milk and sour cream to a large mixing bowl.  Whisk until well combined.  Mix through half of the tater tots, along with the diced ham, half of the shredded cheese, onion powder and garlic powder.  Season to taste with salt and pepper.

STEP THREE – Pour the egg mixture into a 9 x 13 inch baking dish.  Arrange the remaining tater tots in a single layer over the egg mixture.

STEP FOUR – Bake the casserole for 40 minutes.  Scatter over the remaining shredded cheese, and bake for a further 10 minutes, or until the cheese has melted and the casserole has cooked though.

STEP FIVE – Garnish the casserole with the sliced green onions before slicing and serving.

Storage Instructions

Store this casserole in an airtight container in the fridge for up to 3 days.  Reheat using the oven or microwave.

This casserole is suitable for freezing.  Freeze in an airtight container for up to 3 months.  Thaw in the fridge overnight before reheating according to the above directions.

Make-Ahead Option

The casserole could be assembled the night before and stored unbaked in the fridge overnight, then baked in the oven the next morning.

Chopped bell pepper and baby spinach leaves are also delicious in this casserole.
