Cheese Breakfast Casserole

I love this easy cheesy breakfast casserole with cottage cheese and two types of cheddar, which combines with the eggs and hash browns to bring this satisfying dish together.

It’s a crowd-pleasing one-dish meal that combines feel good comfort food classics like eggs, shredded potatoes, cheese, bacon and sausage into a hearty breakfast casserole.

The best part is you can make it ahead time for a stress free Christmas morning breakfast or family brunch that everyone will love!

I like to serve this savory dish for holiday brunch with sweet recipes like my blueberry French toast casserole, cinnamon roll apple cobbler, Monkey bread or cranberry orange scones.

Ingredients

  • Bacon – diced, use your favorite bacon
  • Onion – medium onion diced
  • Breakfast Sausage
  • Hash Browns – frozen hash browns thawed
  • Eggs
  • Whole Milk
  • Sharp Cheddar Cheese – shredded
  • White Cheddar Cheese – shredded
  • Cottage Cheese
  • Salt and Black Pepper
  • Garlic Powder
  • Optional Parsley – chopped parsley is optional for a garnish

Substitutions & Variations: You can use your favorite cheese mix or substitute mozzarella for the white cheddar cheese. Use ground turkey instead of sausage for a lighter version. Instead of using bacon you can use diced ham or turkey bacon for different flavor profiles.

How To Make Amish Breakfast Casserole

Step One – Preheat oven to 350°F. Spray a 9×13-inch baking dish with cooking spray.

Step Two – In a large skillet, cook diced bacon until crispy. Remove with slotted spoon and drain on paper towels.

Step Three – In the same skillet, cook sausage and onion unPl sausage is browned and onion is soft, about 7-8 minutes. Drain excess fat.

Step Four – Layer thawed hash browns in the bottom of prepared baking dish.

Step Five – In a large bowl, whisk together eggs, milk, salt, pepper, and garlic powder.

Step Six – Stir in both shredded cheeses, cottage cheese, cooked bacon, and sausage mixture.

Step Seven – Pour over hash browns, spreading mixture evenly to reach all corners of the dish.

Step Eight – Bake uncovered for 50-60 minutes until set in the middle and lightly golden on top.

Can I Make This Breakfast Casserole Ahead Of Time?

Yes! You can assemble the casserole the night before, cover it tightly and refrigerate it. Bake it fresh in the morning adding 5 to 10 extra minutes if baking straight from the fridge.

How Do I Know When This Hashbrown Breakfast Casserole Is Done?

The casserole is done when the center is set, and a knife inserted in the middle comes out clean. It should be lightly golden on top as well.

Storage and Reheating Instructions

Store the Amish breakfast casserole in an airtight container in the fridge for up to 3 days.

Reheat individual servings on a microwave-safe dish in the microwave for 1 to 2 minutes until warmed through. Reheat larger servings using a baking dish in the oven at 350°F for 15 to 20 minutes.

To freeze wrap portions or the whole casserole tightly with plastic wrap and foil. Freeze for up to 2 months and thaw in the fridge overnight before reheating.

1 medium onion, diced
1 pound breakfast sausage
1 pound frozen hash browns, thawed
8 large eggs
3/4 cup whole milk
1 1/2 cups sharp cheddar cheese, shredded

1 1/2 cups white cheddar cheese, shredded

1 cup cottage cheese
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon garlic powder
