Best Holiday Bacon and Egg Breakfast Casserole

This is one of the best Christmas morning breakfast casseroles with hearty eggs, bacon and melted cheese that is an ideal budget-friendly way to feed bigger family gatherings!

I love serving this bacon cheese and egg bake with my Cracker Barrel cheesy hash browns and my easy monkey bread for a perfect cozy breakfast or brunch combination.

The best part (besides all that yummy bacon) is that it can be make ahead of time to serve when ready to make life easier on busy holiday mornings or large family breakfasts.

Ingredients

  • Eggs – 8 large eggs
  • Milk – 3/4 cup milk
  • Bacon – 1 pound bacon, cut into bite sized pieces, I like to buy my bacon when it goes on sale and freeze it until I am ready to use it to help save money
  • Cheddar Cheese – 2 cups shredded cheddar cheese
  • Onion – 1 cup diced onion
  • Red Bell Pepper – 1 red bell pepper, diced
  • Bread – 2 cups cubed day-old bread
  • Thyme – 1 teaspoon dried thyme
  • Garlic Powder – 1/2 teaspoon garlic powder
  • Salt and Black Pepper – 1/2 teaspoon salt and 1/4 teaspoon black pepper
  • Parsley – chopped parsley for garnish, is optional

Substitutes & Variations: You can use any type of bread or croissants in this recipe. Substitute with your favorite cheese like Swiss, gouda or pepper jack cheese. Add or substitute your favorite vegetables like spinach, mushrooms or zucchini.

How to Make Bacon and Cheese Egg Bake

STEP ONE – Preheat oven to 350°F. Grease a 9×13 inch baking dish.

STEP TWO – In a large skillet, cook the bacon pieces until crispy. Remove bacon and set aside to cool.

STEP THREE – In the same skillet with the bacon grease, sauté the diced onion and bell pepper over medium heat until softened, about 5-7 minutes.

STEP FOUR – In a large bowl, whisk together eggs, milk, thyme, garlic powder, salt, and pepper.

STEP FIVE – In the prepared baking dish, spread the cubed bread evenly.

STEP SIX – Sprinkle the crumbled bacon, sautéed onion and bell pepper, and cheese over the bread.

STEP SEVEN – Pour the egg mixture evenly over everything in the baking dish.

STEP EIGHT – Gently press down with a spatula to ensure all ingredients are moistened.

STEP NINE – Bake for 35-40 minutes, or until the eggs are set and the top is golden brown.

STEP TEN – Let cool for 5 minutes before serving.

STEP ELEVEN – Garnish with chopped parsley, if desired. Enjoy!

Can I Make this Bacon And Egg Casserole Ahead Of Time?

Yes, you can prepare it the night before and bake it in the morning. Just cover and refrigerate overnight. Or you can make and bake it ahead of time stored in an airtight container for 1 or 2 days before reheating.

How to Reheat a Bacon And Egg Bake?

Reheat in a 350°F oven covered with foil to prevent it from drying out for 20 to 30 minutes until heated through. Or you can reheat single portions on a microwave-safe dish in the microwave using 30 second intervals until heated through.

Can I Use Pre-cooked Bacon?

Yes, using pre-cooked bacon will save time. Just crumble it and add it to the dish.

Can I Make This Egg Bake Without Bread?

Yes, you can leave out the bread if you prefer a low-carb version. The bake will still be delicious!

How Do I Know When The Egg Casserole Is Done?
