  • 8 ounces spaghetti noodles
  • 1 pound ground beef
  • ¾ cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1 (14.5-ounce) can diced tomatoes, drained
  • 1 (8-ounce) can tomato sauce
  • 1 (1.25-ounce) packet taco seasoning mix
  • 1 cup canned corn, drained
  • 1 cup black beans, drained and rinsed
  • ½ cup water
  • 1 teaspoons cumin
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • Optional toppings: chopped fresh cilantro, sliced jalapeños, sour cream, sliced black olives, diced avocado

Step by Step Instructions

STEP ONE – Cook the spaghetti according to package directions until al dente. Drain and set aside.

STEP TWO – In a large skillet or frying pan on medium heat, add the ground beef and cook, breaking it apart with a spatula, until it is fully browned and cooked through. Drain any excess grease if necessary.

STEP THREE – Just before the beef is done browning, add the chopped onion and minced garlic. Sauté the onion and garlic until the onion becomes translucent and the garlic is fragrant.

STEP FOUR – Stir in the diced tomatoes, tomato sauce, taco seasoning mix, corn, black beans, water, and cumin.

Let the mixture simmer for about 5-10 minutes or until some of the liquid evaporates, allowing the flavors to meld together. Season with salt and pepper to taste.

STEP FIVE- Add the cooked spaghetti to the pan. Toss everything together until the spaghetti is evenly coated with the sauce.

STEP SIX – Sprinkle the shredded cheddar cheese on top of the taco spaghetti and cover the skillet with a lid. Let it cook on low heat for a couple of minutes or until the cheese has melted.

STEP SEVEN – Remove the skillet from heat, and garnish the taco spaghetti with chopped fresh cilantro and any optional toppings you desire, such as sliced jalapeños, sour cream, sliced black olives, or diced avocado.
