Ingredients You’ll Need

  • 3-4 tbsp olive oil
  • 1 lb ground beef
  • ½ small onion, finely chopped
  • 4 oz can diced green chiles
  • 1 oz packet taco seasoning 
  • 20 corn tortillas
  • 16 oz can refried beans 
  • 8 oz sharp cheddar cheese, shredded
  • Optional toppings like cilantro, sour cream, salsa, avocados, tomatoes etc

Step By Step Instructions

STEP ONE – Preheat the oven to 425°F. Line 2 large baking sheets with parchment paper and grease each with 1 tablespoon of olive oil.

STEP TWO – Finely dice the onion.

STEP THREE – Add the ground beef, diced onion, green chiles, and taco seasoning to a medium bowl. Use your hands to mix until well combined.

STEP FOUR – Dampen 4–5 paper towels with water. Working with 2–3 tortillas at a time, wrap them in the damp paper towels and microwave for 30 seconds, until warm and steamy. This makes the tortillas more pliable and helps prevent them from cracking.

STEP FIVE – Spread a spoonful of the meat mixture over one half of each tortilla. Add a smaller spoonful of refried beans to the other half, then sprinkle with shredded cheese.

STEP SIX – Gently fold each tortilla in half and arrange on the prepared baking sheets. Brush the tops and sides with olive oil.

STEP SEVEN – Bake for 12–15 minutes, until the tacos are crispy and golden. Flip them halfway through baking, if desired.

STEP EIGHT – Serve warm with your favorite toppings, such as cilantro, sour cream, salsa, avocado, or tomatoes.
