Italian Sausage Tortellini Soup (Stovetop)

The classic pairing of Italian sausage and tender tortellini is simply irresistible, and the creamy broth is rich and satisfying.
Ingredients
- Olive Oil
- White onion
- Sweet Italian sausage
- Garlic
- Seasonings: Parprika, Italian seasoning, fennel seeds
- Salt
- Chicken Broth
- Half and Half cream
- Fresh cheese tortellini- the kind you can buy in the refrigeraor section in the grocery store.
- Fresh baby spinach
Substitutes
- You can substitute kale for the spinach. Just make sure to remove the tough stems and allow the kale a few additional minutes to soften.
- You can substitute spicy Italian sausage in this recipe, if you prefer.
Step by Step Instructions
STEP ONE. Heat the olive oil in a large soup pot over medium high heat. Add the diced onion and sauté 3-4 minutes, until the onion is softened and translucent.
STEP TWO – Add the sausage. Crumble it into small pieces with a spatula and cook until fully browned. Drain the excess fat from the pot.
STEP THREE – Add the minced garlic, paprika, Italian seasoning, fennel seeds, and kosher salt to the sausage and stir well. Pour the chicken broth into the pot and heat the soup until it reaches a low boil.
STEP FOUR – Turn the heat down to medium. Add the half and half to the soup and stir to combine. Bring the soup back to a simmer.
STEP FIVE – When the soup is simmering, add the fresh tortellini and baby spinach. Stir well. Cook for 3-4 minutes, until the pasta is tender and the spinach has cooked down into the broth.
Storage Instructions
Store in an airtight container for up to three days.
Can I freeze this soup?
- I do not recommend this soup for freezing. The fresh pasta is delicate, and doesn’t hold up well to freezing and reheating. You can store leftovers in the refrigerator for a few days. The tortellini will be a bit softer upon reheating, but the flavor will still be great.

2 cloves garlic, minced
1/2 teaspoon paprika
1/2 teaspoon Italian seasoning

1/4 teaspoon kosher salt, plus more to taste
4 cups chicken broth
2 cups half and half
10 ounces fresh cheese tortellini*
2–3 handfuls fresh baby spinach (about 3 ounces)
