Description

Sausage Tortellini Soup is a delicious and simple weeknight meal. With a rich and creamy broth, tender cheese tortellini and savory Italian sausage, this soup is hearty enough even for big appetites. Serve it with a salad and some crusty bread for a homemade meal on the table in less than 30 minutes.


Ingredients

1 teaspoon olive oil

1 small white onion diced (approximately 1/2 cup of diced onion)

1 pound sweet Italian sausage

2 cloves garlic, minced

1/2 teaspoon paprika

1/2 teaspoon Italian seasoning

1/2 teaspoon fennel seeds

1/4 teaspoon kosher salt, plus more to taste

4 cups chicken broth

2 cups half and half

10 ounces fresh cheese tortellini*

2-3 handfuls fresh baby spinach (about 3 ounces)


Instructions

  1. Heat the olive oil in a large soup pot over medium high heat. Add the diced onion and sauté 3-4 minutes, until the onion is softened and translucent.
  2. Add the sausage. Crumble it into small pieces with a spatula and cook until fully browned. Drain the excess fat from the pot.
  3. Add the minced garlic, paprika, Italian seasoning, fennel seeds, and kosher salt to the sausage and stir well. Pour the chicken broth into the pot and heat the soup until it reaches a low boil.
  4. Turn the heat down to medium. Add the half and half to the soup and stir to combine. Bring the soup back to a simmer.
  5. When the soup is simmering, add the fresh tortellini and baby spinach. Stir well. Cook for 3-4 minutes, until the pasta is tender and the spinach has cooked down into the broth.

Notes

Storage instructions: Store in an airtight container for up to three days in the fridge.
