Ingredients You’ll Need

- 2 large boneless skinless chicken breast, cut into 1 inch pieces
- 1 1/2 tsp. salt
- 1 tsp. dried oregano
- 1/4 tsp. pepper
- 2 tbsp. olive oil
- 2 tbsp. unsalted butter
- 1/2 a large yellow onion, diced
- 2 sticks of celery, diced
- 1/2 cup sun dried tomatoes, chopped small
- 4 cloves of garlic, minced
- 2 tbsp. tomato paste
- 2 tbsp. pesto
- 4 cups chicken broth
- 16 ounces dried potato gnocchi
- 1 cup heavy cream
- 5 ounces fresh baby spinach
- 1/2 cup shredded parmesan cheese, plus more for topping
Step By Step Instructions


STEP ONE – Add the butter and olive oil to a large pot and heat over medium-high heat.
STEP TWO – Add the chicken, then season with salt, oregano, and pepper. Cook for 4–5 minutes, stirring frequently. The chicken will not be fully cooked at this point and will finish cooking in the soup.
STEP THREE – Add the onion and celery and cook for 3–4 minutes, until softened.


STEP FOUR – Stir in the sun-dried tomatoes, garlic, tomato paste, and pesto. Cook for another 1–2 minutes.
STEP FIVE – Pour in the chicken broth and bring to a boil.
STEP SIX – Reduce the heat and simmer for 10–15 minutes.
STEP SEVEN – Add the gnocchi and simmer for another 3–5 minutes.
STEP EIGHT – Stir in the heavy cream, spinach, and Parmesan cheese. Cook for 2–3 minutes more, then serve hot with extra Parmesan if desired.

Store leftover Marry Me Chicken Gnocchi Soup in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop over medium-low heat or in the microwave until heated through. The gnocchi will absorb some of the broth as it sits, so add a splash of chicken broth or cream when reheating if needed.
Freezing: I wouldn’t recommend freezing this soup, as the cream can separate and the gnocchi may become soft or mushy after thawing.
