Ingredients
2 large boneless skinless chicken breast, cut into 1 inch pieces
1 1/2 tsp. salt
1 tsp. dried oregano
1/4 tsp. pepper
2 tbsp. olive oil
2 tbsp. unsalted butter
1/2 a large yellow onion, diced
2 sticks of celery, diced
1/2 cup sun dried tomatoes, chopped small
4 cloves of garlic, minced
2 tbsp. tomato paste
2 tbsp. pesto
4 cups chicken broth
16 ounces dried potato gnocchi
1 cup heavy cream
5 ounces fresh baby spinach
1/2 cup shredded parmesan cheese, plus more for topping

Store leftover Marry Me Chicken Gnocchi Soup in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop over medium-low heat or in the microwave until heated through. The gnocchi will absorb some of the broth as it sits, so add a splash of chicken broth or cream when reheating if needed.
Freezing: I wouldn’t recommend freezing this soup, as the cream can separate and the gnocchi may become soft or mushy after thawing.
