Honey roasted baby carrots
This simple honey glazed carrots stove top recipe has only 4 ingredients plus salt and pepper seasoning, that is a breeze to put together.
You can also use baby carrots which can help to simplify this recipe even further with no peeling!! Try them with my yummy honey butter on top.
I love serving these honey garlic butter roasted carrots with my Dutch oven chicken and creamy cheesy mashed potatoes for a wonderful family favorite weeknight dinner.
They are the perfect sweet side dish to go with any of my savory easy chicken dinners like Ritz cracker chicken, marry me chicken recipe or juicy air fryer chicken thighs.

Ingredients
- Carrots – 2 pounds of carrots peeled and sliced
- Honey
- Garlic Cloves – minced
- Butter
- Salt and Ground Black Pepper
- Parsley – optional garnish
Substitutions
You can use baby carrots to make this recipe but check them earlier to be sure they are not overcooking.
How to make honey roasted carrots recipe
STEP ONE – In a large sauce pan, or skillet, melt butter over medium heat. Add minced garlic, and cook until fragrant, about 30-45 seconds.
STEP TWO – Remove from heat, and stir in honey until fully combined. Toss carrots in honey garlic mixture and spread on a sheet pan in a single layer. Sprinkle with salt and pepper and bake at 425°F for 20-25 minutes or until golden brown and tender.
STEP THREE – Remove from oven and taste for seasonings and adjust as needed. Garnish with freshly chopped parsley if desired.
Serve, and enjoy!
Variations
Sprinkle some salty crumbled feta cheese on top of the carrots to balance the sweetness.

- Use fresh firm carrots with a bright orange color and smooth skin
- Cut your carrots the same size so that they all cook evenly, you do not want the smaller carrots to be done and the bigger carrots too crunchy!!
- Make them ahead of time to save time during the holidays stored in the fridge, follow our reheating instructions below as they are best served warm
- Watch carefully to prevent burning or overcooking, they should be tender and slightly crispy, caramelized but not overly charred
Storage and reheating instructions
Store any leftover roasted carrots in an airtight container for up to 3 days in the fridge.
You can reheat them in a 350°F oven covered with foil for 10 to 15 minutes or until warmed through. Reheat them using a microwave safe dish for 30 second intervals or in the skillet on the stove over a medium heat until warmed through. Check that you are not overcooking them while reheating as they will become mushy.
