Honey Roasted Carrots Recipe

Description

This easy Honey Roasted Carrots Recipe is simply delicious as caramelizing the carrots while roasting enhances their natural sweetness with a slightly crisp exterior. Take your carrots to another level as honey compliments the carrots perfectly. One of the most beloved side dishes to serve with ham, turkey or roast beef for family dinners or get togethers at the holidays!!


Ingredients

2 pounds carrots, peeled and sliced

2 Tablespoons honey

4 cloves garlic, minced

4 Tablespoons butter

1/4 teaspoon salt

1/4 teaspoon black pepper

Chopped parsley for garnish, optional


Instructions

  1. In a large sauce pan, or skillet, melt butter over medium heat. Add minced garlic, and cook until fragrant, about 30-45 seconds.
  2. Remove from heat, and stir in honey until fully combined. Toss carrots in honey garlic mixture and spread on a sheet pan in a single layer. Sprinkle with salt and pepper and bake at 425F for 20-25 minutes or until golden brown and tender.
  3. Remove from oven and taste for seasonings and adjust as needed. Garnish with freshly chopped parsley if desired.
  4. Serve, and enjoy!

Notes

Storage and reheating instructions:

Store any leftover roasted carrots in an airtight container for up to 3 days in the fridge.

You can reheat them in a 350°F oven covered with foil for 10 to 15 minutes or until warmed through. Reheat them using a microwave safe dish for 30 second intervals or in the skillet on the stove over a medium heat until warmed through. Check that you are not overcooking them while reheating as they will become mushy.
