Crockpot Beef Tips & Gravy

This savory Crockpot Beef Tips and Gravy recipe is the ultimate comfort food for chilly fall and winter evenings. Juicy, tender beef simmers in a rich gravy and tastes incredible served over mashed potatoes, rice, or egg noodles for a hearty, family-friendly dinner.

Thanks to the slow cooker, this meal is simple to prepare and perfect for any night of the week. Serve it up with my creamy Boursin mashed potatoes and a side of green beans.

Ingredients

3 pounds stew meat

Salt and pepper, to taste

2 tablespoons olive oil, to sear beef

1 (0.87 ounce) brown gravy packet

1 onion, diced

3 garlic cloves, minced

2 cups low sodium beef broth

3 tablespoons cornstarch

10.5 ounce can cream of mushroom soup

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 bay leaf

Step By Step Instructions

STEP ONE – Place the stew meat into a large mixing bowl. Season with salt and pepper and mix to combine.

STEP TWO – Heat a large skillet over medium-high heat and add oil. Once hot, sear the beef until browned, about 3 minutes on both sides. Work in small batches if needed to avoid overcrowding the pan. Transfer the seared pieces into the bottom of the slow cooker pot.

STEP THREE – Top the seared beef with the gravy mix, onions, and garlic.

STEP FOUR – In a bowl, stir the beef broth and cornstarch together until the cornstarch dissolves. Add the cream of mushroom soup, and worcestershire sauce. Stir, pour into the crockpot, and then add dried thyme and a bay leaf.

STEP FIVE – Cover and cook for 7-8 hours on low until beef is tender.

STEP SIX – Serve over mashed potatoes and garnish with herbs.

Storage Instructions

Refrigerate leftovers in a sealed container for 3 or 4 days.

Reheat on the stovetop over medium heat for 10-12 minutes until heated through.
