Melt In Your Mouth Crockpot Beef Brisket
This BBQ beef brisket recipe is a favorite for sandwiches but is equally delicious served with rice, mashed potatoes, and a side of vegetables for dinner.
When making these irresistible sandwiches I suggest using fresh hamburger buns or brioche buns with a good helping of coleslaw or crispy onions, extra bbq sauce and your favorite pickles.
The best sides to pair with it are French fries, potato chips, corn on the cob, Mexican Street Corn, Mexican street corn pasta salad, cornbread or red potato salad.
Ingredients
- 4 pounds Beef Brisket (trim excess fat if desired)
- 1 tablespoon Avocado Oil – or use olive oil
- 1 large Onion, sliced
- 1 ½ cups BBQ Sauce (I used Stubb’s Sticky Sweet BBQ sauce)
- ½ cup Beef Broth
- Parsley, for garnish (optional)
For The Dry Rub
- 1 tablespoon Brown Sugar
- 1 tablespoon Smoked Paprika
- ½ tablespoon Chili Powder
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
- 1 teaspoon Cayenne Pepper
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
I used a 7-quart slow cooker and Stubb’s Sticky Sweet BBQ sauce, but you can substitute it with the same amount of your favorite BBQ sauce or a homemade version.
How To Make Slow Cooker BBQ Beef Brisket
Step One – In a medium bowl, whisk together the BBQ sauce and beef broth. Set aside.
Step Two – In a small bowl, combine the dry rub ingredients.
Step Three – Pat the brisket dry with paper towels. Then massage the dry rub all over the brisket.
Step Four – Heat a large skillet over medium-high heat. Once hot, add oil and then sear the brisket on all sides until browned, about 3-4 minutes each side.
Step Five – Transfer the brisket into the bottom of the slow cooker pot and surround with the sliced onions.
Step Six – Pour the BBQ sauce and broth mixture over the brisket.
Step Seven – Cover with the lid. Cook on LOW for 8-10 hours. For a smaller 2 pound brisket, cook for less time on LOW for 6-8 hours.
Step Eight – Once cooked, remove the brisket from the slow cooker and transfer to a cutting board. Slice or shred the meat then return it back to the slow cooker and stir into the sauce.
Step Nine – Garnish with fresh parsley if desired.
To Make Beef Brisket On A Bun:
Make brisket burgers by adding the brisket into a warm hamburger bun, topping with coleslaw and pickles, and serving with a side of French fries or chips. Enjoy!

- Cooking the brisket low and slow helps achieve a tender texture. If the meat is still tough when you check it, simply return it to the slow cooker and let it cook for an additional hour.
- When slicing beef brisket, always cut against the grain to shorten the muscle fibers, making the meat more tender. Slicing with the grain can result in tougher, harder-to-chew pieces.
- You can use the dry rub provided in the recipe, a store-bought premade dry rub, or choose to create your own custom blend of seasonings.
