Crockpot Chicken Fajitas (with Fajitas Seasoning)
These crockpot chicken fajitas are a set-it-and-forget-it kind of dinner that still feels fresh and satisfying. Serve them in warm tortillas with your favorite toppings like salsa, sour cream, or guacamole. It’s the kind of meal that makes weeknights easier and way more delicious.

2.25 pounds boneless skinless chicken breasts
1 ยฝ (1 oz) packets fajita seasoning mix
1 cup salsa
3 large bell peppers (mix of colors), deseeded and thickly sliced
1 large red onion, halved and thickly sliced
1 lime, juiced
Fresh cilantro, for garnish
How to Make Slow Cooker Chicken Fajitas


STEP ONE – Place chicken into the bottom of a slow cooker pot.
STEP TWO – Add the fajita seasoning and salsa. Cover with lid and cook on LOW for 4-6 hours, or on HIGH for 3-4 hours, until the chicken is cooked through and tender.


STEP THREE – During the last hour of cooking, add in the peppers and onions. Squeeze fresh lime juice on top. Cover and continue to cook until desired tenderness is reached.
STEP FOUR – Remove the chicken breasts and transfer to a chopping board. Slice into strips (or shred into smaller chunks using two forks) and then return to the slow cooker. Stir in with the bell peppers.
STEP FIVE – Garnish with fresh chopped cilantro and serve with flour tortillas and desired sides. Enjoy!

Storage Instructions
Allow to cool completely before covering. Store leftovers in an airtight container and refrigerate for 3-4 days.

Ingredients Notes:
Seasoning: I used store bought fajita seasoning packets, however you can use 4-5 tablespoons of your own homemade fajita seasoning.
Bell Peppers: Any colored bell peppers will work. I like to use a mixture. You can also opt to use sweet mini peppers if desired.
Onions: White or yellow onions can be used instead of red if thatโs what you have.
Make it spicy : To make it spicy, add serranos, habaneros, jalapenos, cayenne pepper, or hot sauce.
Change the protein: This recipe can easily be made with beef by using cuts such as flank steak or skirt steak. Cooking times will be similar, just cook the meat until tender, add the peppers and onions during the last hour of cooking, and then shred the meat.
How to serve: You can enjoy these chicken fajitas with flour tortillas, corn tortillas, in quesadillas, in burritos, or in bowls over rice or quinoa, or as nachos over tortilla chips.
