We love comforting, hearty meals and this easy chicken and dumplings recipe is the perfect dish for busy weeknights.

We’ve simplified it by using store-bought refrigerated biscuits which makes getting this chicken casserole into the oven a breeze.

What I love most about this meal is that I can use leftover or pre-cooked chicken from the day before and it’s easy to customize using whatever veggies you have on hand.

Chicken and dumplings are great served with side dishes that complement it without overpowering it like my green beans almondine, sweet cornbread, or my simple garden salad.

Ingredients

  • Cooked Chicken – shredded
  • Onion – diced
  • Carrots – chopped
  • Celery Stalks – chopped
  • Butter
  • Flour
  • Chicken Broth – or you can substitute vegetable broth for a lighter flavor.
  • Milk
  • Poultry Seasoning
  • Garlic Powder
  • Salt & Black Pepper
  • Store Bought Biscuits – I used Pillsbury Grands Biscuits cut into quarters
  • Frozen Peas – or you can substitute with frozen green beans or corn.

How To Make Chicken And Dumplings With Biscuits

STEP ONE – Preheat oven to 375°F

STEP TWO – In a large oven-safe skillet over medium heat, melt butter. Add onion, carrots, and celery. Cook until softened, about 5 minutes.

STEP THREE – Sprinkle flour over vegetables and stir for 2 minutes.

STEP FOUR – Gradually stir in chicken broth and milk, ensuring no lumps remain. Add poultry seasoning, garlic powder, salt, and black pepper. Simmer until the mixture thickens, about 5 minutes. Stir in shredded chicken and frozen peas.

STEP FIVE – Place quartered biscuit pieces evenly on top of the chicken mixture.

STEP SIX – Transfer the skillet to the oven and bake for 15-20 minutes, or until the biscuits are golden brown and cooked through.

Let stand 5 minutes before serving. Enjoy!

Tips – Sauce too thick or thin?

  • Too Thin: Let the mixture simmer for an extra 2-3 minutes to thicken. If needed, mix 1 tablespoon of cornstarch with 1 tablespoon of cold water and stir it in.
  • Too Thick: Add a splash of milk or chicken broth and stir until the desired consistency is reached

Storage And Reheating Instructions

Chicken Biscuit Dumplings should be stored in an airtight container in the refrigerator for up to 3 days.

To Reheat: Warm in the oven at 350°F for 15 minutes or microwave until heated through.

To Freeze: This recipe is best enjoyed fresh, as the biscuits may become soggy when frozen and reheated.

2 tablespoons butter

1/4 cup flour

1/2 teaspoon salt

1/4 teaspoon black pepper

1 can (16.3 ounces) Pillsbury Grands Biscuits, cut into quarters

1 cup frozen peas
