Red, white and blue poke cake

This cake recipe is perfect to add a fun festive flair to any Fourth of July or Memorial Day celebrations that everyone will love!

I first made my lemon jello poke cake and it become such a big hit in the family often requested for birthdays that I am just going to make more yummy flavors.

I love the simplicity of these poke cake recipes that start with a simple box cake mix for a finished cake just as tasty as cakes with longer prep times.

Ingredients

Ingredients for poke cake on countertop.
  • Box of White Cake Mix – 1 box of white cake mix baked according to the box directions in a 9×13 baking dish, use your favorite brand of cake mix or what is one sale
  • Strawberry Jello – 3 ounce box helps to make a moist cake
  • Berry Blue Jello – 3 ounce box adds flavor and moisture
  • Boiling Water
  • Cold Water
  • Strawberries – chopped
  • Blueberries
  • Whipped Topping – 8 ounces whipped topping found in the frozen section, you can use Cool Whip or what is on sale to save money

How To Make Berry Poke Cake Recipe

Step by step images for how to make berry poke cake.

STEP ONE – Bake cake in a 9×13-inch baking dish according to package directions. Allow the cake to cool completely.

STEP TWO – Use a wooden skewer to poke several holes all over the cake.

STEP THREE- Add one cup boiling water to the strawberry Jello and whisk until the powder is dissolved, then stir in one cup cold water. 

STEP FOUR – Spoon the red Jello over the cake, filling in the holes. Spread in a random pattern, leaving space for the blue Jello.

STEP FIVE – Add one cup boiling water to the blue Jello and whisk until the powder is dissolved, then stir in one cup cold water.

STEP SIX – Spoon the blue Jello over the cake, filling in the empty space where there is no red Jello.

STEP SEVEN – Cover the cake and place in the refrigerator to chill for at least one hour.

STEP EIGHT – Spread the whipped topping in an even layer over the top of the cake.

STEP NINE – Decorate the cake with the strawberries and blueberries before serving.

Storage instructions

Store any leftover cake covered with wrap or in an airtight container for 2 to 3 days.

1 box white cake mix, prepared in a 9×13 pan

1 3 ounce box berry blue Jello

1 3 ounce box strawberry Jello

2 cups boiling water

2 cups cold water

8 ounces whipped topping

2 cups chopped strawberries

2 cups blueberries
