Bacon Egg and Cheese Breakfast Casserole

Description

This easy and delicious Bacon Egg and Cheese Breakfast Casserole recipe is a perfect breakfast to feed a crowd or to make ahead anytime for busy mornings. It’s a favorite casserole in our family that combines breakfast ingredients like bacon, eggs and cheese. Making it a go-to savory dish of comfort food for a holiday breakfast or brunch that everyone loves!


Ingredients

8 large eggs
3/4 cup milk
1 pound bacon, cut into bite sized pieces 2 cups shredded cheddar cheese
1 cup diced onion
1 red bell pepper, diced
2 cups cubed day-old bread
1 teaspoon dried thyme
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Chopped parsley for garnish, optional.


Instructions

  1. Preheat oven to 350°F. Grease a 9×13 inch baking dish.
  2. In a large skillet, cook the bacon pieces unHl crispy. Remove bacon and set aside to cool.
  3. In the same skillet with the bacon grease, sauté the diced onion and bell pepper over medium heat unHl soRened, about 5-7 minutes.
  4. In a large bowl, whisk together eggs, milk, thyme, garlic powder, salt, and pepper.
  5. In the prepared baking dish, spread the cubed bread evenly.
  6. Sprinkle the crumbled bacon, sautéed onion and bell pepper, and cheese over the bread.
  7. Pour the egg mixture evenly over everything in the baking dish.
  8. Gently press down with a spatula to ensure all ingredients are moistened.
  9. Bake for 35-40 minutes, or unHl the eggs are set and the top is golden brown.
  10. Let cool for 5 minutes before serving.
  11. Garnish with chopped parsley , if desired.

Notes

Storage instructions: Store by covering with tightly with wrap or in an airtight container in the fridge for 2 to 3 days.
