This easy and delicious Bacon Egg and Cheese Breakfast Casserole recipe is a perfect breakfast to feed a crowd or to make ahead anytime for busy mornings. Ingredients
8 large eggs
3/4 cup milk
1 pound bacon, cut into bite sized pieces 2 cups shredded cheddar cheese
1 cup diced onion
1 red bell pepper, diced
2 cups cubed day-old bread
1 teaspoon dried thyme
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Chopped parsley for garnish, optional.
Instructions
- Preheat oven to 350°F. Grease a 9×13 inch baking dish.
- In a large skillet, cook the bacon pieces unHl crispy. Remove bacon and set aside to cool.
- In the same skillet with the bacon grease, sauté the diced onion and bell pepper over medium heat unHl soRened, about 5-7 minutes.
- In a large bowl, whisk together eggs, milk, thyme, garlic powder, salt, and pepper.
- In the prepared baking dish, spread the cubed bread evenly.
- Sprinkle the crumbled bacon, sautéed onion and bell pepper, and cheese over the bread.
- Pour the egg mixture evenly over everything in the baking dish.
- Gently press down with a spatula to ensure all ingredients are moistened.
- Bake for 35-40 minutes, or unHl the eggs are set and the top is golden brown.
- Let cool for 5 minutes before serving.
- Garnish with chopped parsley , if desired.

Storage instructions: Store by covering with tightly with wrap or in an airtight container in the fridge for 2 to 3 days.
