Overnight blueberry French toast casserole
This easy overnight breakfast dish features sweet flavors like blueberries, brown sugar, cinnamon and vanilla making it beyond irresistible!!
We love it so much we make it all year long and look forward to it on the holidays served with delicious sweet maple syrup and fresh berries on the side.

Ingredients
- French Bread – 1 loaf
- Whole Milk – is the best for a creamy custard in this recipe.
- Heavy Cream
- Brown Sugar – I used a light brown sugar
- Eggs
- Vanilla Extract – I like to use pure vanilla extract for the best flavor, you could also substitute with artificial if that is what you have on hand
- Cinnamon – ground cinnamon
- Salt
- Butter
- Blueberries – you can use fresh or frozen blueberries, I like to use fresh blueberries if in season and available
- Maple Syrup – pure maple syrup is best for serving
Substitutions
In place of heavy cream you can use whole milk but the casserole will not be as rich. You can use less brown sugar if you do not like it as sweet.
French Toast Casserole Streusel Topping Variation
You can make a streusel crumble topping by combining 7 Tablespoons of cold butter, 1/3 cup light brown sugar, 1/3 cup of all purpose flour and 1/2 teaspoon of ground cinnamon.
With clean hands, fork or pastry blender, combine ingredients until you have a crumbly consistency. Sprinkle the streusel on top of the casserole before baking.
What type of bread can I use?
You can use sourdough bread, brioche, or challah. Make sure the bread is very dry before baking. If the bread is too moist it will result in a soggy casserole!!
How To Make Blueberry French Toast Casserole Recipe
STEP ONE – Cut the loaf of bread into slices and then cut each slice into thirds.
Place the bread chunks on a baking sheet for at least 8 hours or overnight so they dry out.
STEP TWO – In a large bowl, combine the whole milk, heavy cream, light brown sugar, eggs , vanilla, cinnamon and salt. Whisk for 2-3 minutes or until fully mixed. Set aside.
Pro Tip: If you don’t have time to dry the bread for 8 hours or overnight, you can place the bread in a preheated oven at 325°F for 10 minutes or until the bread is dried out. (not toasted and crunchy though!)
STEP THREE – Butter a 9×13-inch casserole dish on the bottom and the sides. Alternatively, you can spray with non-stick spray.
STEP FOUR – Transfer the stale bread to the baking dish.
STEP FIVE – Top the bread evenly with the fresh blueberries.
STEP SIX – Pour the egg custard (egg mixture) over the bread and blueberries into the baking dish, making sure all bread pieces are coated.
STEP SEVEN – Cover baking dish with plastic wrap and place in the fridge for 3 to 24 hours.
STEP EIGHT – Preheat the oven to 350°F and remove the baking dish from the fridge.
STEP NINE – Place baking dish in preheated oven and bake, uncovered for 45 to 55 minutes.
Allow casserole to rest for 5-10 minutes before serving. We love to serve our casserole with maple syrup and fresh blueberries. Enjoy!
Sandra’s Top Tips
- If the top starts to get too brown, tent the top of the baking dish with aluminum foil
- When you store any leftovers they can become soggy, reheating it in the oven will help it to not be soggy
- Serve with fresh fruit salad, maple syrup, whipped cream or easy homemade blueberry syrup. A sprinkled of powedered sugar adds sweetness and looks pretty on a plate as well.
Storage And Reheating Instructions
You can store the leftovers once cooled in the fridge using an airtight container or covering with foil or plastic wrap for up to 3 days.
You can also freeze this dish without baking it. Using a freezer-safe container you can freeze it for up to 2 months. Thaw in the fridge overnight before baking according to the directions.
To reheat: Preheat oven to 350°F and bake until heated through.

- 2 cups whole milk
- 3/4 cup heavy cream
- 3/4 cup light brown sugar (or less if you don’t want it too sweet)
- 6 eggs
- 1 tablespoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 tablespoon butter, softened
- 2 cups blueberries fresh or frozen
Instructions
- Cut the loaf of bread into slices and cut each slice into thirds. Place the bread cubes on a baking sheet for at least 8 hours overnight so they dry out. If you do not have time to leave the bread out notes are listed below.

- Transfer the stale bread to the baking dish.
- Top the bread evenly with the blueberries.
- Pour the egg custard over the bread and blueberries into the baking dish. Make sure all the bread pieces are coated.
- Place the covered baking dish in the fridge for 3 to 24 hours.
- Preheat the oven to 350° F and remove the baking dish from the fridge.
- Place the baking dish in the oven for 45-55 minutes uncovered.
- Place an aluminum tent on top of the baking dish if the top starts to get too brown.
- Allow the casserole to rest for 5-10 minutes before serving.
