Description
This delicious Amish Breakfast Casserole recipe is a family favorite one-pan wonder dish for breakfast gatherings and weekend brunches. With crispy bacon, breakfast sausage, hash browns and 3 different cheddar cheeses it’s a real crowd-pleaser for an easy yummy holiday breakfast.
Ingredients
12 ounces bacon, diced
1 medium onion, diced
1 pound breakfast sausage
1 pound frozen hash browns, thawed
8 large eggs
3/4 cup whole milk
1 1/2 cups sharp cheddar cheese, shredded
1 1/2 cups white cheddar cheese, shredded
1 cup cottage cheese
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon garlic powder
optional chopped parsley for a garnish
Instructions
- Preheat oven to 350°F. Spray a 9×13-inch baking dish with cooking spray.
- In a large skillet, cook diced bacon until crispy. Remove with slotted spoon and drain on paper towels.
- In the same skillet, cook sausage and onion unPl sausage is browned and onion is soft, about 7-8 minutes. Drain excess fat.
- Layer thawed hash browns in the bottom of prepared baking dish.
- In a large bowl, whisk together eggs, milk, salt, pepper, and garlic powder.
- Stir in both shredded cheeses, cottage cheese, cooked bacon, and sausage mixture.
- Pour over hash browns, spreading mixture evenly to reach all corners of the dish.
- Bake uncovered for 50-60 minutes until set in the middle and lightly golden on top.

Storage and reheating instructions:
Store the Amish breakfast casserole in an airtight container in the fridge for up to 3 days.
Reheat individual servings on a microwave-safe dish in the microwave for 1 to 2 minutes until warmed through. Reheat larger servings using a baking dish in the oven at 350°F for 15 to 20 minutes.
To freeze wrap portions or the whole casserole tightly with plastic wrap and foil. Freeze for up to 2 months and thaw in the fridge overnight before reheating.
