Easy Breakfast Cookies

They are so quick and easy to make in just 20 minutes, making them the perfect for a healthy breakfast or after-school snack.

Soft, chewy, and naturally sweet, they are a simple treat everyone will love.

If you want to make these breakfast cookies gluten-free, buy rolled oats that are labelled ‘gluten free’ and made in a factory without other gluten products.

  • Rolled oats – I like to use quick oats in this recipe or you can substitute the old-fashioned oats
  • Chocolate chips – I like to use mini dark chocolate chips for these cookies. You can also use regular-sized and milk chocolate as well.
  • Bananas – overripe bananas with nice dark brown spots will add just the right amount of sweetness.
  • You will notice that this recipe has no vanilla extract and it doesn’t need it! They are perfectly delicious without the addition of vanilla.

Step by Step Instructions

STEP ONE – Mash bananas.

STEP TWO – Mix all ingredients together in a large bowl.

STEP THREE – Shape cookie dough by hand into round discs and place on cookie sheet. The cookie shape will resemble a flat disc.

STEP FOUR – Bake in 350°F oven for 12 to 15 minutes. They will still be a little soft when you take them out of the oven.

STEP FIVE – Cool on baking tray for a minute, then move baked cookies to a wire rack and enjoy!

Variations

Add in raisins, your favourite nuts like pecans or walnuts, dried cranberries or dried cherries. For cinnamon lovers add in 1/2 tsp. ground cinnamon to give these cookies even more great flavour.

Sandra’s tips for making the best 3 ingredient banana oatmeal cookies recipe

  • Almost all grocery stores have a rack with reduced produce. This is the perfect spot to find ripe bananas that are perfect for these cookies.
  • For gluten-free make sure the rolled oats are labelled gluten-free.
  • Make these cookies your own by adding in your favourite nuts or dried fruit.
  • Use pieces of parchment paper for lining the baking sheets to help prevent over browning and sticking

For an easy healthy breakfast and a great way to satisfy your sweet tooth in the morning, slather a bit of creamy peanut butter on one of these cookies. Trust me! It’s delicious. This is a great cookie to tuck into a backpack and take along for a hike. Crumble them up in your morning bowl of oatmeal or cereal for a boost of flavor.

Storage & Freezing Instructions

Store cooled cookies in an airtight container for up to 3 to 5 days or in the fridge for 7 days.

If you do not want to serve from the fridge cold you can leave them out at room temperature for 30 minutes before eating.

These cookies freeze very well. Place them in a freezer-safe container or ziplock freezer bag 2 to 3 months. Thaw at room temperature or in the fridge before serving.

Ingredients

3 ripe bananas, mashed

1 and 1/2 cups rolled oats

1/3 cup chocolate chips


Instructions

  1. Mash bananas.
  2. Mix all ingredients in large mixing bowl.
  3. Shape cookie dough by hand into round dics and place on cookie sheet. 
  4. Bake in 350°F oven for 12 to 14 minutes. The will be a little soft when you take them out of the oven.
  5. Cool on baking tray for a minute, then move baked cookies to wire cooling rack. Enjoy!!

  3. I make these all of the time. Everyone loves them. I do alter the recipe from time to time. I use sugar free chips and I sometimes add in sugar free peanut butter chips or coconut. I am trying raisins with them today. Pretty sure they will be delicious as well.
