Strawberry Poke Cake

Strawberry Poke Cake is a simple dessert that combines a moist box cake with fruity strawberry Jell-O infused throughout, topped with a light and dreamy layer of Cool Whip. It’s the perfect easy and delicious dessert for potlucks, BBQs, summer parties, or gatherings.

Strawberry Poke Cake With Jello

The cake is ‘poked,’ allowing the strawberry Jell-O to soak in, creating a beautiful layered effect with a bright, sweet strawberry flavor!

I love the combination of the strawberry poke and the cool whip on top—it tastes just like a summer picnic, light, refreshing, and delicious.

It’s so simple to make but feels and looks like a fancy dessert!

Ingredients

  • 1 box white cake mix, plus ingredients from the box directions- water, oil, eggs
  • 1 (3 oz.) package strawberry jello mix
  • 1 1/2 cups water, divided
  • 8 ounces whipped topping like cool whip – or use homemade whipped cream
  • fresh strawberries, are optional but add a nice fresh fruit topping presentation

I like to use fresh strawberries for extra fruity flavor. You can top with whole or sliced strawberries or mix strawberry pieces into the cool whip.

How To Make Strawberry Poke Cake

STEP ONE – Prepare the white cake, according to the box directions, in a 9×13 inch pan.

STEP TWO – Allow the cake to cool slightly, and use a straw or the skinny end of a wooden spoon to poke holes throughout the cake.

Strawberry jello mix is added to the water in saucepan.
Jello mixture is poured over the baked cake that has been poke with holes.

STEP THREE – In a medium saucepan, bring 1 cup of water to a boil.

STEP FOUR – Remove from the heat and whisk in the strawberry jello mix.

STEP FIVE – Add remaining 1/2 cup cold water, and stir.

STEP SIX – Carefully pour the jello into the poked holes on the cake.

STEP SEVEN – Move the cake to the refrigerator to chill for 6 hours, or overnight.

STEP EIGHT – When you are ready to serve, frost the top of the cake with the 8 ounce container of cool whip, and when serving, add a fresh strawberry if desired. Enjoy!

Storage Instructions

For the best taste and freshness, poke cake is best enjoyed on the same day or the next. If needed, it can be stored in an airtight container in the refrigerator for up to two days.
