This Quick and Easy Chili Recipe can be enjoyed as quickly as 30 minutes, or simmered for up to two hours for a thicker chilli. A satisfying meal after a busy day, this is a simple recipe with basic ingredients.

This is the best chili recipe winner in our house – I hope it will be in yours too! Most of us have grown up with an ideal of what a perfect chili recipe should have and many people claim that they have secret ingredients in their chili recipe.

I can’t say that this one has any earth-shattering ‘secret’ ingredients, however the ratio of meat, tomatoes, beans and spices is just perfect.

Enjoy it after 30 minutes or let it simmer up to 2 hours!

One thing I love about this recipe is that it tastes delicious after 30 minutes and does not need to cook for the full two hours. I had taste-testers chomping at the bit who were more than happy to try it out at the 30 minute mark.

Cooking it for the additional hour and half thickens it up and the spices mellow, but if you’re in a hurry after a busy day, you can throw this together in ten minutes then let it cook while you have a glass of wine and put your feet up 🙂

A few tips for making this recipe

Yellow onions are best for this recipe

Thoroughly drain and rinse the beans. I’ve read a few recipes that call for leaving the liquid and adding it to the chili. Fear not, this chili will be full of flavour and not lacking without that liquid.

If you want a spicy, hot chili, add in hot pepper flakes towards the end of cooking to taste.

Favourite Toppings for Chili

-sour cream

-corn chips

-diced avocadoes

-shredded cheese- old sharp cheddar or Monterey Jack, although you can use any cheese

-sliced jalapeno peppers

-chopped green onions

What’s your favourite topping? We definitely like a side of fresh buttered bread or buns 🙂 The boys even tossed it on a freshly made flour tortilla with some shredded cheese and it was delicious!

Ingredients

2 lbs.lean ground beef

1 tbsp. olive oil

1 medium yellow onion, chopped

24 cloves garlic, chopped

1 can crushed tomatoes (28oz.)

1 tbsp. Worcestershire sauce

1 tbsp. brown sugar

2 tbsp. tomato paste

3 tbsp. chili powder

2 tbsp. ground cumin

1 and 1/2 tsp. salt

1/2 tsp. freshly ground pepper

1 can (16oz.) kidney beans, drained and rinsed


Instructions

1. In a Dutch oven or skillet, heat olive oil, then add chopped onion and garlic. Sauce for two minutes, then add in ground beef and cook until no longer pink and completely cooked through.

2. Drain and rinse kidney beans and set aside.

3. In the same Dutch oven, or large, heavy pot, combine cooked ground beef mixture, crushed tomatoes, Worcestershire sauce, brown sugar, tomato paste, chilli powder, ground cumin, salt, pepper and drained kidney beans. Stir well to combine.

4. Cook over medium heat for 30 minutes. Chilli may be eaten at this point, however may be cooked for up to another hour and half for a thicker chili.
