Description

I love this Easy Blueberry French Toast Casserole recipe that is bursting with juicy blueberries and a soft custard like mouth watering texture. Prepare this breakfast casserole the night before and then bake it in the morning. Perfect for a stress free morning to feed a crowd for breakfast or brunch at special occasions like Easter, Mother’s Day and the holiday season.


Ingredients

  • 1 loaf of French bread (12-16 ounces)
  • 2 cups whole milk
  • 3/4 cup heavy cream
  • 3/4 cup light brown sugar (or less if you don’t want it too sweet)
  • 6 eggs
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 tablespoon butter, softened
  • 2 cups blueberries fresh or frozen

Instructions

  • Cut the loaf of bread into slices and cut each slice into thirds. Place the bread cubes on a baking sheet for at least 8 hours overnight so they dry out.  If you do not have time to leave the bread out notes are listed below.
  • In a large bowl add the whole milk, heavy cream, light brown sugar, eggs, vanilla extract, cinnamon, and salt. Mix for 2-3 minutes or until fully mixed. Set aside.
  • Butter a 9×13 baking dish on the bottom and the sides.
  • Transfer the stale bread to the baking dish.
  • Top the bread evenly with the blueberries.
  • Pour the egg custard over the bread and blueberries into the baking dish. Make sure all the bread pieces are coated.
  • Place the covered baking dish in the fridge for 3 to 24 hours.
  • Preheat the oven to 350° F and remove the baking dish from the fridge.
  • Place the baking dish in the oven for 45-55 minutes uncovered.
  • Place an aluminum tent on top of the baking dish if the top starts to get too brown.
  • Allow the casserole to rest for 5-10 minutes before serving.

Notes

Storage and reheating instructions:

You can store the leftovers once cooled in the fridge using an airtight container or covering with foil or plastic wrap for up to 3 days.

You can also freeze this dish without baking it. Using a freezer-safe container you can freeze it for up to 2 months. Thaw in the fridge overnight before baking according to the directions.

To reheat: Preheat oven to 350°F and bake until heated through.
